This is one of my favorite cakes. So moist and sweet and delicious. It is named after the mighty, muddy Mississippi. I always turn off the oven, put the marshmallows on the cake, put it back in the oven for about 2 minutes, then pour the frosting on. Yum yum.

Made this today for a moms group and had folks asking for the recipe afterwards. Super easy and my kids loved helping me measure the ingredients. It was really yummy and came together quickly. Great recipe. My daughter who is funny about chocolate likes it. After putting the marshmallows on I threw it in the hot oven for a min to help melt the marshmallows. It was so good!!

This is like the Texas sheet cake my mother made throughout my childhood, except she covered the hot cake with marshmallow fluff so that it melted into a smooth layer, then it was topped with a boiled chocolate frosting and pecans. She made the cake in a half-sheet pan so it was fairly thin. Perfect layers of cake, marshmallow, and a fudgy frosting!

I'm always nervous too when he slides stuff away from him. His island must be wider than we can see, so there's plenty of room for things to slide without falling off the edge. It seems like he really enjoys sliding things out of the way 😁
