This video is designed for those of you who don't have Dutch ovens. I will discuss and demonstrate how you can bake no-knead bread on a cookie sheet, in a pie plate or a skillet.

Yo Steve. I'm a 52 year old guy, whose never posted a comment before and never baked anything but packaged brownie mix. I just had to give kudos to you. After watching a whole bunch of videos on baking bread, I figured I'd give real baking a try. I settled on your video and methods as the clearest and easiest to follow. Awesome, awesome job! I've just made my 3rd loaf and have gotten nothing but compliments from family, friends and coworkers. The skillet method worked perfectly. The loaves came out golden brown and actually look delicious. The crust was slightly crunchy, the inside fluffy and perfect. When I told coworkers the loaf was homemade, they complimented my wife. When I told them I baked it, they asked if I had gotten a bread machine. Funny thing is, using an aromatic olive oil makes the bread smell slightly like pizza--so, I give this warning: do not transport loaf to friend's house in a vehicle; it will make the whole car smell too good and you'll have to fight off the passengers with a stick. hehehe

i've baked a lot of bread over the years (a lot with the bread machine, but not always) and i've watched a lot of youtube videos of others making bread. you're right, steve's videos and instructions are great. steve makes this look so easy, it's almost like meditation. i am going to be making this one very soon. i commend you, basset, for being inspired to try your hand at bread baking.

Steve, i found your videos a few days ago. I tried other bread videos; which resulted in a lot of pain and little success-- plus, weird results. I just pulled your bread out of the oven 30 minutes ago. Loved it. My daughter woke up to the smell, and had taste. She was amazed. Can't wait for the grandkids & great-grands to try. At 71, and disabled cooking has become a problem; and i had almost given up on bread making. Then, i saw this video. It seemed, too easy. I'm estaticly happy with the results. Thank you, Thank you, Thank you. I'm 52 and just made fresh bread for the first time today! Thank you, Steve!! I added a spoon full of italian herbs & chopped sun-dried tomatoes and baked it in a covered pyrex dish. It is AMAZING and my family & I ate the whole loaf dipped in Olive Garden Salad Dressing! My next attempt will be an Olive Loaf!!

I love how simple you make each step....nothing complicated. It's like you just CAN'T screw this up! Presentation is awesome! My mother-in-law used to make bread in her bread machine. She experimented with all kinds of combinations and flavors. She makes everything look and taste amazing. She's the best there is in the mother-in-law department! Love her to pieces!

love the video, very easy to follow. I even liked how you paused after each step. it didn't make me feel rushed. this video inspired me to try bread making after years of thinking it was to complicated. my first try turned out great. now my family and friends keep asking me when I'm making more, as they finish their last bit. thanks for the video. AMAZING!! Steve, awesome video and recipe! Just made this bread this evening and my daughter and I dang near ate the entire loaf! This bread was truly delicious and could not have been more simple to do! Not even looking at buying a loaf of crusty bread from the store anymore! My 9 qt dutch oven and 12 in cast iron were too large..so made it in a 8 in pie pan..came out PERFECT! Thanks!

I tried making bread last week. It took 3 tries to get the yeast to activate and when I added the yeast to the flour to proof, it was a flop...I hope this is a no fail recipe 🤞

I just made this recipe and it is LEGIT!! So good!! I took the advice from someone in the comments and put ice cubes in a tray below the pan and it came out super crispy and brown.

Steve, first and foremost, I want to thank you personally for the incredible skill you have taught me on making the best bread. I am a service member stationed in Italy and since I came across your channel, I utilize your techniques for my dinner parties to include homemade bread. My local Italian neighbors love it so your technique is now global.!!!! Appreciate the speed and ease and the end result is that I can't keep it on the table. I have to put it out as the antipasto now along with my prosciutto and cheese plate. Thank you again!!

If a recipe doesn’t say instant yeast, they’re generally referring to dry active yeast and there is a difference... instant yeast is more potent and reliable. Steve

Steve thank you for simply instructing how to make delicious bread, especially to a first timer like myself!! Like many others I watched several other videos of how to make no knead bread, and I am so satisfied with my choice. I had the help of my 3 year old making this dough a few days ago. My grandmother actually used to put the loves straight on the floor of the wood oven, where there were some coals and burning wood to the side, after wood had burned and heated the oven for a while. She would make about 10-12 big loaves, to last 2 weeks, since it was a big job to heat up such a big oven and make the though for a big family (all village women would use the same oven, the owner of which would preheat it)

(1) You can use beer as the wet ingredient, (2) I don’t use the fan (aero bake), (3) I frequently leave the dough out to proof overnight, especially in cooler weather, (4) I never use a pan of water or spray the oven... it can damage some ovens, and (5) baste the dough in oil, proof it in an 8” skillet, and then put it on the cookie sheet to bake. The oil will prevent the bread from sticking to the cookie sheet. Steve

My first attempt at bread making didn't go so well, but after watching your video my second attempt is going much better. My bread is in the skillet proofing as I type waiting for the oven to heat up. I don't have a Dutch Oven but now I know I can use my Corning ware. Thanks for your videos and inspiration! ... I just may be a bread maker yet.

Thank you so much Steve! I was dying to try this bread, but I didn’t dare to try it without that famous Dutch oven. I just made this recipe and aside from a beautiful bread it was delicious and gone in less than an hour! Thank you so much 😊😊

I used a 9-1/2" skillet for the video and you can use any skillet that is big enough to hold the bread. Steve

Are you using a pizza stone to keep heat more consistent? I am new to your channel but I am sold! I Purchased two 5 lb bags of flour, two bags of whole wheat flour and yeast. I am a breadoholic! Thank you for the confidence to venture into these Waters.

Hi Steve, thanks for your videos! Gosh, I almost bought into the idea that I needed a Dutch Oven. My question is, can I bake your bread in a glass pie dish? Do I need to preheat it? Thanks!

Great! That bread makes me want to try your recipe. I bought 3 piece set of Dutch ovens. Never used either. I certainly plan to use your recipe with mom’s cast iron skillet. I have precious memories of mom baking bread. This time of year was hard to bear after mom passed away. I had to create a way to survive. I began making some of mom’s recipes from my childhood. Thank you for for sharing your recipes. THANK GOD FOR THE MEMORIES OF MY MOM.

I use oil for this bread to prevent it from sticking when it's inverted and placed in a skillet or on a cookie sheet. Steve

Steve, would covering the bread dough in the oven when it's baking help in any way?

Donna G. Personally I put an aluminum foil cover (dull side down) during the last 10-15 minutes of baking so as not to make the top too brown or crusty. Also putting a tin of water at the bottom layer of the oven during the whole cooking time makes the bread more moist and less crusty all over.
