I’ve been making this No Knead Artisan Bread Recipe of Steve’s for the past couple years and it turns out great every time. It’s a great tasting bread with a crispy crust and good crumb texture. I just wish the crust would stay crispy when storing. Great for cold cut sandwiches, toast with spreads, or just by itself. I have thoroughly enjoyed watching your video’s and learning from them. The pandemic has really affected and changed the lives of so many people and it’s really taken our lives to a whole new level of living. People are going more back to the basics of baking homemade bread. I couldn’t have learned this art of baking bread at a better time. Thanks Steve! Be well and stay safe.❤️

You do great videos and have inspired me to make bread! Thank you! May I pass along a tip I got from watching Italian Grandma? She uses a heavy piece of plastic to wrap around her bowl of dough instead of using plastic wrap. It reduces the use of plastic significantly. I use a plastic bag that sunflower bird seed came in. I cut it to lay flat and then use a silicone band bought on Amazon to hold it on. If the plastic is big enough, you can just wrap the bowl. After, I just wash it off, dry, and refold and store in the cabinet for next time.

I didn't have time to make the bread yesterday, so I made the dough in the morning and stuck it in the fridge. I took it out in the late afternoon and let it rise overnight. Formed the loaves, let them rise for 1.5 hours and baked them this morning. Best bread ever! Thanks, Steve for your easy to follow recipes.

After buying your book ive been a bread baking fool. I don't have a plastic spoon so I take a wooden spoon and spray the handle with cooking spray works for me. I liked your use of the dutch oven so much that I bought one. It's a Lodge cast iron, and the lid doubles as a frying pan, as in handles on the side instead of in the middle. I just turn it upside down and it works great; I don't have to worry about getting burned as easily when transferring. It's perfect for bread. Thanks for all the videos, Steve, thanks to you I'm on a roll!

Hi Steve, Thanks for your inspiring instruction. I bake a loaf every other day. I add some herbs de province, tarragon, some toasted seeds, pumpkin, sunflower and I throw in a handful of toasted almonds. Wonderful-and buying flour in bulk saves a fortune. I can't get bread like this in a store.

Update from my last comment: I made this bread today - in an oval casserole dish as that’s the only vessel I had with a lid - and it’s come out GREAT!! For someone like me who almost had ‘dough phobia’ 🤪, it’s an incredible achievement. I’m fired up now and my husband is also a happy bunny, really enjoying this fresh bread with the butter melting as you spread it... A BIG thank you Steve! I made this bread yesterday & I'm happy with the results. My 1st proof, which was supposed to be longer, started the next phase at only 5 hours. the results were perfct. I coated the dough towards the end with olive oil. I also put a few sesame seeds on its top. I would like to try a whole-wheat and/or many-seeded next time.

I love this bread so much, I've been making it almost every week since January. I wanted to tell you about a variation I've been making. I use exactly the ingredients you say in this video, but I add 1/4 cup whole rye flour and a tablespoon of caraway seeds. Then when I turn it out of the bowl the next day, I use rye flour on the surface and add some more caraway seeds on top. I also like to make your exact recipe with sesame seeds added. Thanks so much for this video and recipe!

I really enjoy having learned to bake my own bread. Thank you! A couple months ago, I decided to try something different. Just before I add the water to dry ingredients, I've prepared 3 small tomatoes, par-boiled so the skins will come off easily. I then put tomatoes in blender to puree them, pour pureed tomatoes onto flour mix and then add water and mix in. I use a cast iron pan and have learned to pre-heat oven at 400 degrees instead of 450 degrees so I get a nice brown color where before my bread would come out darker and a harder crust. I've always gotten beautiful bread but now I get a bread with a bite into you'll not forget! Joe would say the bread was great when fresh from the oven but now with the tomatoes added, he compliments the bread always! I slice the bread, butter it and toast it on my flat griddle. We like the bread with tomatoes much better! I decided to send some toasted bread slices fresh from the griddle, individually wrapped in parchment paper & foil wrap for Joe to pass out to his friends at work. One person doesn't like tomatoes and won't touch a ketchup packet but after someone told her it was great tasting, she asked Joe if he still had the bread he'd offered her and turned down. He did. She loved it! I grow my own tomatoes but in the last year, I've been buying tomatoes during the winter, I let them sit and ripen on my counter and then use them in my cooking. I had a thought to try putting tomatoes in my bread mix to see if I could still follow the same proofing method I've learned hoping it would be a success. I've also tried something new with the end bread. I slice it to split it open, I butter and toast it, I then push it down to toast the inside of it and then add mozzarella cheese and flip it down split open to slightly toast the cheese to melt! Wow! As well, each time I bake a bread, I butter the top, flip it upside down onto a plate, butter the bottom and sides and then let cool. My African Grey, RodneyBird has been watching me bake bread for over a year now. I tell him to wait 20 minutes to let cool and I'll give him a piece. Like Joe, RodneyBird loves my tomato bread even better! The bread has a pinkish tint to it and is quite appealing-looking. Even our friend who doesn't like tomatoes was impressed with her warm toasty bread with bits of tomatoes staring up at her but she ate the whole thing (half a slice of a slice), before she went to her job to work! Periodically, I'll send in chocolate chip cookies and sometimes tortillas to work with Joe. I wondered if anyone would turn down the bread Joe had to offer using the words tomato bread but they didn't. One of them said, yeah, anything she makes is good! That was a great compliment! In the last year, I've passed on this channel to friends who are interested and now I'll be passing on the adding of one extra ingredient, tomatoes, to our friends who've been baking this easy to prepare bread! I mentioned my African Grey because when we got him almost 4 years ago, we were told he doesn't like females. He doesn't fly and he has his own space where he free roams...in my kitchen! Egads, huh? Every time I'd be washing dishes and singing as I typically do, he'd sneak up and bite my bare feet. Well, the singing stopped so I'd be alert to the little guy. I started baking bread Nov. 2020 and since then he hasn't bit me! I finally got his love and appreciation via his tummy. I do keep 2 different buckets of water with 2 drops essential oils; anise myrtle, which he loves where he will perch to keep the dander & feathers contained from flying around the kitchen, so don't get grossed out when I offer you any baked goodies or a meal at my table, k? Foremost, I've just started singing again since baking my tomato bread and RodneyBird responds with "Woo!" and we now whistle back and forth in the kitchen together. Oh, and I allow my tomato bread dough to rise 12-24 hours before I do the end process of letting it rise 1 1/2 hours before putting into bake for 30 minutes in my cast iron pan for 30 minutes. I felt like sharing a long-azz story with you all that has been a significant part in my joyous discovery in the baking of bread. Just sayin'!

I did this a week ago and used bread flour. It turned out fantastic. Then I did it today and used pastry flour because I ran out of the other. Wow, what a difference. It turned into a giant hamburger bun using my cast iron pot. I recommend using only bread flour. Live and learn.

Nice trick with the spoon handle mixing. I always wondered why you couldn't just let the dough sit overnite, I assumed it would rise then fall, but I never tried it. Looks great.

I have also used this recipe / method to make great pan bread / flat breads, like naan. I just use a spoon to scoop out a small amount, flour to mould to a ball then roll out, then drop into a pan with some hot ghee or oil. A few minutes per side to get it as I like it - gold and a touch crispy. It's delicious and fast.

This was my first bread baking attempt, and it was wonderful. I moved on to sourdough but Steve's bread was the first and I have come back to it for timing and simplicity. And taste. I just did the math, and this bread is about 88% hydration. That's really something!

I let my bread cool at least 30 minutes before slicing, however, sometimes I cut it before. Anyway, the crust is always wonderful and the bread crumb has a great texture! It’s yummy with butter!

My bff was tired of paying $4 for a loaf of, essentially, Wonder Bread. So then he wanted to buy a KitchenAid stand mixer. I talked him out of that. Next was a $300 bread machine. Really? Let me see what I can do. I tried one recipe (I lost track of your excellent video), using whole wheat flour. First time making yeast bread since HomeEc 1973. Hey, not bad! Then I (re)found this video (yay!). I’m recovering from the nastiest cold I’ve ever had. Once I’m 100% I’m going into “artisan bread-making” mode, thanks to you, Steve. I think my bff created a monster!

Well, I have watched a dozen videos today and this was the best one yet...thanks so much fr the info...you made it plain, cean and crisp. I am working with Sprouted Wheat Flour and going to incorporate your method into that.

Steve, watched this Ultimate no-knead bread recipe and technique and found it to be highly superior, so much so I had to find a three qt DO. A used Martha Stewart three qt. cast iron DO turned up on Ebay and got it. So baked my first loaf in the new DO and was amazed at the crust and crumb of this loaf. I recently watched a DIY video on baguettes which gave me an idea. I wanted to try softening the crumb by replacing one cup of bread flour with half cup of cake and half cup of rye flour and let it rise for 24hrs and 1 1/2hrs on the second rise. Results are fantastic. The crumb is soft and pliable and perfectly baked. Even my wife who hates rye bread ate a couple of slices for dinner last night. It's also great when toasted and a garlic clove rubbed on both sides then butter spread. Exceptionally delicious. Thanks for your video.

2021-03-21 💗 🍞🥖Steve Gamelin taught me to bake my own bread. I have been making them for almost three years, I mix with dried garlic powder, all kinds of dried herbs, curry, nuts, seeds etc. but also, cinnamon, honey or with extra sugar then you get sugar bread :-) No one makes bread so fast, simpel and much easier as 'Steve from no knead bread'. I thank you a lot Steve😃 Much loaf love from the Netherland
