I cook my fresh eggs using the cold water method ever since I learned I could use a thin, cheap spoon to easily peel! I boil as normal, rinse under cold water a few times, then crack the egg on the side of the pan, and insert the spoon just under the membrane, then slide the spoon around and oh my, the shell comes right off! If you have a stubborn membrane, you can slide the spoon in and save the egg white and not lose anything--its fantastic and I wish I'd discovered it sooner in life! No worries about how to boil the eggs this way!!

I bought one of the wire mesh baskets meant for an instant pot pressure cooker, it has a handle similar to a bucket, I simply place all my eggs in the basket and lower them in, allow to cook, I place them in the boiling water, which I've added a tablespoon of vinegar to, this helps keep the white close to the egg in case it cracks, I allow to come back to boil, boil 1 minute, cover and turn off the burner, allow to sit for 20 minutes, then remove the basket, plunge into a bowl of cold water and either peel or place into my cooler.

I just let the pile up through the week in a basket, non refrigerated since it is not necessary to refrigerate if left unwashed. Then at the end of the week I wash them up, put them in cartons and refrigerate. As long as your unwashed eggs are kept in a cool place, they can last for months but I still like to get them dealt in a week or less. Then they are ready to use, sell, or give away

As far as stocking up and food storage, O yes, I have a great MANY videos on that and a playlist just on that topic alone. You can do a search on my channel to find most of them. I will link you to the one I did last year that was a pretty popular one about "Beyond Rice and Beans": kzbin.info/www/bejne/jYiviWymjLaSesk Plus I have more specific videos on milks, proteins, sugars, salts, and more. @RainCountryHomestead3 жыл бұрын
You can and often people will boil the shells from other eggs before drying and consuming but my opinion is that the boiling leaches at least some of the nutrients out of the shells so those I typically will toss in the garden

I am not clear on what you are asking. If you are talking about fermenting, yes, you can ferment the eggs in beet juice, I have done it a few times and love them that way but if you are going to ferment, then you need some kind of starter such as I showed in the video or even whey, If you are going to pickle, that is different, you will need to add vinegar but I do not know how much because I do not pickle eggs, I just ferment them
