I am from Philippines and i remember my mom would always use pork with some fats on them., i think they are part of the meat that is made for bacon, anyway my mom always use lots of smash garlic and never remove the skins , she just leave them on smash cloves ..delicious and i lost my mom last year and i am living here in Canada so when is see someone make it online it brings me back home...but i always make them with sliced pork chops here... and thank you for using ribs on your version... it solved my problem of serving ribs now i can have ribs and adobo all in one...thank you😋😋😋😋🙏🙏🙏🙏 and sribs are very lean and fat free too

Yes, Philippine Adobo is one of my favourite dishes, as well. It is very versatile; one can adobo-ize anything! Fish, chicken, pork, stewing beef, ox tail, et cetera. Masarap na ulam!

I would add a can of Chaokoh or Aroy-D coconut milk in the braising liquid and then toss in some roasted fresh pineapple. It offsets the sourness of the dish.

If I wanted to braise them stovetop….how long do you think? Or oven?

Marinate ribs at least 2 hours up to overnight. The longer, the better. Preheat oven to 300°F. Place ribs and marinade in baking dish and cover tightly with foil. Bake for 2 1/2 hours. Remove ribs and place on a baking sheet. Pour sauce into a pot and reduce on the stove. Baste the ribs with the sauce and broil for 3-5 mins on each side. Hope that helps.

Sorry…had a delay in making. They are delicious!! 1/2 rack (only us 2), Apple cider vinegar. Oven broken no instapot so 1-1/2 times sauce and simmered 1 hr-15mins. Perfect balance sweet, sour, and salty. Total flavor bomb. Daughter loved it. I may try adding a bit of water next time to tamp down the salt a bit for me…hope my daughter doesn’t get mad. Thanks for sharing the recipe!
