Easy Potato Knish

Easy recipe with puff pastry, they came out delicious!
Ingredients:
1-1/2 lbs russet potatoes, peeled and cut into chunks
4 tbsp butter
1 large onion, diced
2 tbsp butter to sauté onions
salt & pepper
puff pastry, thawed
1 egg
olive oil
