This is going to be long. I’m from NY but I’ve lived in the Yucatan for the last ten years. They don’t sell russet potatoes here. When I first came here ten years ago my Mexican neighbour came over to my house and asked me if I could make him a knish and I explained to him that they don’t sell the correct potatoes needed here. Yesterday for the very first time in ten years I found russet potatoes! I ran home and googled knish recipes because I’ve never made them before but dearly miss NY deli food. I will be tripling this recipe, and making many people happy, happy, happy this Christmas/ Hanukkah season. Thank you so much for this step by step recipe.

Every Sunday my father gave me a dollar to put in the tidings basket. Guess what? Every now and then the dollar never saw that basket because I'd buy 4 knishes and ate them while walking back home! That's how much I loved knishes😋 I don't have FB nor Instagram but I will certainly stay in touch with you here.

Shalom, you are bringing a tear to my eye and a smile. One of my favorite childhood treats was a Knish from the Sabrett 🌭 hotdog cart on the street in NYC. Split with mustard of course. I'm in Amish Land Pennsylvania and have not had a Knish in over 25yrs . Thanks to you I'll be having one soon. I occasionally make my Mashed 🥔🥔's with onions and a little good deli mustard mixed in. Welcome! 🥰 I always show the exact ingredients that I use, right after I list the ingredients at the beginning of my full length recipe-videos. You can always check there to see the exact brand that I’ve used. In this case, I used King Arthur Unbleached All-Purpose Flour. As far as the refrigeration of the dough goes, I keep the dough in the fridge while I peel, chop, and boil the potatoes, and sweat the onions, so about 30 to 40 minutes or so.

@@user-lq9bg9rg7t Russet potatoes are best, because of their fluffy and dense texture, and their low moisture content, but you could technically use whatever potatoes you prefer. As far as the cheese goes, keep in mind that cheddar cheese is high in fat, which once melted will mix into the filling, so if you choose to add cheese, make sure not to overdo it, so that your filling doesn’t ooze out when baking.

@@trishfevens9297 I don’t see why not, but be mindful of not adding so much that it will cause the filling to ooze out, as cream cheese has a high fat content. It will, of course, also change the texture and flavor of the filling.

@@bethnutesboettger9445 Absolutely! Just be sure that they cool down completely before doing so. You can either wrap them individually in wax paper and foil and then place them in an airtight container or a Ziploc freezer bag, or you can place them in an airtight container, separating each layer of knishes with wax paper, if you don’t intend to keep them frozen for too long. When ready to serve, unwrap them and lay them out on paper towel so that they come to room temperature, then warm them up in the oven and they’ll be great!

I wanted to keep this recipe parve, so it can be served with meat or dairy. You can, of course, use schmaltz for a meat version or butter for a dairy version, in place of the parve margarine. All 3 versions are absolutely delicious!
