Your baked bean recipe is the same recipe that my mom made in the 50’s and 60’s and what I make now, except we use brown sugar and no meat. I don’t put meat in mine cause we usually eat it with meat.

I made my Cowboy Beans exactly like yours except I cut up the Bacon , then I put it on top of the Beans, that way everyone got a little Bacon and not a whole piece.

I have made baked beans a little differently and everyone loves them. I fix my baked beans with canned baked beans, add in chopped onion, chopped green bell pepper, ketchup, yellow mustard, brown sugar, salt and pepper to taste. Sorry but I never measure! Instead of bacon on top of beans I season boneless center cut pork chops, then place them on top of beans in baking dish, turn to coat chops in bean sauce. Cover with foil and bake at 375-400 until chops are tender. Remove foil and return to oven uncovered until chops are browned.

Pork fat is supposed to be used (rendered) to make lard. Beef fat is rendered to make tallow.

Leslie when you guys have a church potluck do you always put a sign-up sheet up for people to bring things so it's not always on you with our church especially a large church we have a sign-up sheet one of their favorite meals someone brings a desert salad and desserts and it really does help but the kitchen always supplies the drinks and the coffee's lot of people will just bring snacks or appetizers for ahead of time and our church always has a community meal every third Sunday of each month and a lot of the restaurants around us will do need food once in awhile for me always I make goodie bags or some kind of dessert like in the summertime we will make Jell-O cups or pudding cups and made we also make them for shut-ins or people that cannot make it out for that day it seems to work out fine we do that because it is in the name of my girlfriend's little boy that had passed away

I never buy meat with all that fat and bone. Big waste of money. Just buy a leaner cut, might be more expensive out of the gate but not near the waste. You get more for your money.

That’s not entirely true. Sure, the bone is wasted, but the fat can be sliced into strips, frozen and used later in case you want to make pulled pork with a lean cut. You know, for the flavor!
