In this video, we’ll use the air fryer to make Tacos Al Pastor, which are popular Mexican tacos made of marinated pork commonly served with pineapples. I am using a COSORI Air Fryer, but this recipe should be good for most air fryers. Just keep an eye on your food at each phase as you cook, to make sure nothing is undercooked or burning for best results.
This is a pretty easy and quick recipe with possibly the longest part probably being the prep where you marinate the meat. You don’t have to marinate for as long as suggested, but it does make for a better tasting pork in your taco al pastor. But even without marinating, you can have these tacos on the table in between 20 and 30 minutes.

INGREDIENTS LIST
Note: This is pretty much what I used when making this video; please scale as you need. This video shows how I made one batch of four tacos. I was able to do a few more batches.
• 1 kg (approx. 2 lbs) of boneless pork shoulder/butt sliced into 1/4” (6-10mm) slices. (The meat from one 1/4” slice of meat should be enough for 2 tacos. ” (6-15mm) slices. Each slice approx. 125 grams (about 5 ounces) NOTE: When cooking this in the air fryer I used about 2 slices, which would give me about 4 tacos.
• 1 pineapple sliced into 1/4” (6-10mm) slices of rounded wedges or rectangular pieces.(Note: A quarter of this pineapple was used as part of the marinade/sauce.)
• Cilantro/coriander (however much you want to use)
• 1 medium onion, diced
• 1 or 2 limes, cut into 1/4” wedges (however much you want to use)
• 10-12 Tortillas (Corn of flour, whatever you prefer)
For the marinade, which will also be the sauce, I used:
• Achiote paste (about 2 tablespoons (I actually didn’t have access to paste so winged it with achiote powder, which I used 1 tablespoon) Achiote is what gives the meat the red tint. Achiote paste is a combination of various spices, some of which is included here.
• Chili powder 2 tbsp
• Garlic powder 1 tbsp
• Oregano 1 tbsp
• Cumin 1 tbsp
• Salt 1 tbsp
• Pepper 1 tbsp
• Vinegar 3/4 cup
• 1/4 of a pineapple sliced so that it can easily be blended into a sauce. OR Pineapple juice 1 cup
After making the marinade/sauce, be sure to set aside about half of this if you want to use this as a sauce when the tacos are done.
