Lightswift only the one with chipotle, but it’s only used for seafood. For red meat tacos they’re typically without mayo but I’m sure there’s people out there that put some in their salsas

Finally!!!!! Al Pastor is my favoooorite. My brother married into a mexican family and I was introduced to Al pastor and I never looked back. I can eat a whole pound of that in one sitting. I am Mexican and I'm loving your tacos. The salsas I bet they are really tasty, but traditional Mexican salsas go without mayo. The same with Mexican tortillas, they are mixed only with water. Tamales dough is the one that is mixed with lard. That being said, I'm pretty sure your tortillas were delicious with butter. Congratulations bro on some great looking tacos!

Tips: -Take out the chili seeds before boiling water -Use the press 2 times the first to make a tortilla, rotate the tortilla 180°, and use the press again very soft, to make the tortilla very flat

Note, when boiling the chili’s and then when you blend them, do it near the stove vents cause you can gas the house if one of those chili’s decided to be angry. Just lots of coughing and some sneezing but it’s still isn’t pleasant.

The pastor was absolutely amazing, specially the way he tried to emulate the trompo. I don't mind the tortillas, specially because that's basically the best you can get in the US, all store bought tortillas over there are trash compared with the ones back in Mexico. But putting mayo in salsa without showing the world what real salsa is... That's sacrilege. But you know, Guga is as much an artista as he is a scientist, so it's fine in the end.

Si bien yo considero que los tacos al pastor van mejor con una salsa que no sea cremosa (porque es mi gusto personal)pero la cocina se hizo para experimentar y salirse de los parámetros comunes. We have then in Yucatan, they are pretty distinct from lemon and lime and sweet oranges. We also call them sour oranges because of the sour taste, they don't sweeten when ripe.

Mexican Tip; If you soak the tortilla in the pastor juices (not all, just a little bit on one side) before cook it in the pan, uf that takes the things to another level. Nice tacos btw.

I know! I'm researching now. He does say 500 and slice off as it gets done, but I'm not comfortable with that.

We smoked it at about 250 for 6 hours. The internal temp was around 150. It was delicious, but next time I'm going to put the marinade through a sieve. I didn't like how the dried peppers kind of mushed up on the final product.

@@ckmstchr7 that's how we do it and it's fine. Just make sure it's cooked before you slice. The meat will fall into the pan below it and continue to cook in that, if it's not cooked all the way. If you're unsure, watch videos of meat for tacos or even Greek gyros being cut. This is a really common method in various countries from Latin America, Europe, and the Middle East. :)

You have to slice off the meat that is cooked on the outside. The un cooked meat keeps cooking. And you keep slicing the cooked meat. Look up more videos on "tacos al pastor en trompo" they may be all in spanish but you will see they slice off the meat . Your not supposed to cook everything at the same time. Its hard to explain to someone who's never seen it before lol

He says 500 degrees ( obviously not Celsius ) with indirect heat. I'm attempting this tomorrow on my propane grill. I will reply with my results.

I am mexican and i live in México and i can tell you those tacos al pastor look like the best I've eaten. And for some facts, actually tacos al pastor were invented by Arabian people when some migrated to Mexico , they adapted their dishes with the spices of the region and pork meat because lamb was hard to find and to expensive in our country and that's how they came to life. for my mexican friends, that says something about the sauce, remember the culture in usa it´s diferent, we can´t do an extra hot sauce because it doesn´t make sense it will do this tacos uneatable for our usa brothers. saying it without intention of offending.

Mr. Brandon Nah bruh, it depends on where you live. Here in Texas, we put green or red sauce(salsa verde with tomatillos or salsa roja) on our tacos. The green sauce is usually has a good deal of jalapenos so it's kinda spicy; it's my favorite.

Jacob Flores I’m also from Texas and I can assure you the green is not mostly jalapeños - it gets that color from the roasted tomatillos, also where that sauce gets it’s initial tanginess from. As far as heat I have seen it (and made it) with a variety of peppers - just depends on how much heat I’m looking for. You can also roast the peppers for a smokier flavor. You’re welcome

Hey @guga, that was a very close recipee. The only things you missed 1. The most common way to eat a taco al pastor it's with Cilantro and onion. 2. We never use mayonnaise with our salsas. Other than that, everything looks great to me. Congratulations by the way.
