Gumbo
(serves 4-6)

1/2lb andouille sausage
2 chicken thighs (boneless and skinless)
1/2 cup vegetable oil
1/2 cup flour
2 stalks celery
1 onion
1 green bell pepper
4 cloves garlic
1 tsp dried thyme
4 bay leaves
5 cups broth (chicken or vegetable)
1 green onion (garnish)
salt and pepper to taste
2 teaspoons File powder (optional)

This recipe is legit! Have you tried baking the flour? It is so easy instead of making roux with oil.
