HASHBROWNS
1 bag of frozen hash browns thawed
1 cup chopped bell peppers
1 cup chopped onions
1 cup chopped greens
season to taste with garlic powder, onion powder and smoked paprika
Add all the ingredient to a bowl and mix well.
Pre-heat a large non stick skillet on medium heat and add hash brown mixture to the pan and spread out into even layer pressing the potatoes down. Cover and cook for 3 to 4 minutes and then with a spatula flip the potatoes in sections and press down again and cover and repeat the process until you get the crispness you like. You will not have an even layer of crispness and some may stick to the pan. Since we do not cook with oil this will happen and that is why you need an excellent non stick pan.
INSTANT POT POTATOES
Add a steamer basket into your instant pot and add about an inch of water set for 15 minutes on manual then quick release.
QUINOA AND RICE COMBO
1/2 cup white rice
1/2 cup quinoa ( I used the multi color)
rinse the rice and quinoa well and add to rice cooker.
Add 2 cups water and set the rice cooker and forget it.
MINESTRONE SOUP
1 onion chopped
2 large carrots chopped
2-3 stalks celery chopped
1 Tablespoon tomato paste
2 tsp chopped garlic
1 tsp each parsley, oregano and basil
red pepper flakes to taste
2 cups mixed greens chopped
4 cups veggie broth
2 cans 14.5 ounce or 1 28 ounce can of chopped tomatoes
2 cans of white beans rinsed and drained.
1 1/2 cups pasta ( I used lentil)
1 Tablespoon lemon juice.
In a large pot add 1/4 cup water and heat on medium. Add the onion, carrot and celery and saute for 5 minutes. Add the tomato paste and mix well. Add the spices and garlic and saute for another 30 seconds. Add the broth, beans, tomatoes and simmer for 10 minutes, then add the pasta and cook for another 10 minutes or until pasta is el dente. Turn off the heat and add the greens and lemon juice and stir well. Sprinkle with oil free plant based Parmesan. (link below) Optional of course.
