you absolutely can, if you cook strawberries overnight they will be so soft they'll spread with the slightest pressure. if he muddled up what he put in that jar just a couple times it would take on the consistency you're expecting.

You can cut the berries smaller or crush them a little and they will turn out the way you want.

My thoughts, Slice all the berries thin and add the sugar. Bake at 170 as described but in the quart jar. When done the next morning just pop a band and lid on it, cool till the lid pops and then put it in the ice box

Strawberries are in season right now and often on sale and perfectly ripe at my store. I just made jam, and it's so much better tasting than store bought. I'm waiting for the peaches and apricots to get in season and ripe, and I'll do those too.. I live in the desert southwest, so I'll have to wait a little while.

Jacques is still doing it at the age of 88! That goes to show, don't worry too much about carbohydrates, etc., as Jacques Pepin has eaten white flour Baguettes his whole life. Just a) don't eat processed food, b) cook your own food with LOVE and have FUN.

Interesting, I have not seen it done this way before. I know my family always make blackberry jam, and strawberry too but we always sieve the seeds out. I learn the coolest methods from Jacques. My grandmothers way was a "song and dance" routine. This looks so simple. I'll give it a try. Thank you sir as always!

The unripened strawberries contain higher amounts of natural pectin than the ripe berries do, so if you're picking your own throw in a handful of just about to turn ones for mashing fine. This will help thicken your jam naturally and won't add other flavors into your jam. Pure strawberry bliss!
