Easy Thai-style beef salad
Serves 4 | Prep10 mins (+5 mins resting time) | Cooking 5 mins
Ingredients:
240g (4 nests) Coles Asia Thin Egg Noodles
1/3 cup (80ml) Thai-style salad dressing
80g Coles Australian Leaf Salad Mix
100g cherry tomatoes, quartered
1 carrot, shredded
1 long red chilli, seeded, sliced (optional)
400g pkt Coles Australian No Added Hormone Beef Scotch Fillet Thinly Sliced
Method:
1. Cook the noodles in a large saucepan of boiling water for 4 mins or until tender. Refresh under cold water. Drain well. Transfer to a large bowl. Add half the dressing and toss to combine. Season.
2. Combine salad mix, tomato, carrot, half the chilli, if using, and remaining dressing in a large bowl.
3. Heat a barbecue grill or chargrill on high. Season steaks. Cook the steaks for 2 min each side or until cooked to your liking. Transfer to a board and set aside for 5 mins to rest. Thinly slice. Pour any resting juices over the noodle mixture. Toss to combine.
4. Divide the noodle mixture, salad mixture and steak among serving bowls. Serve with remaining chilli.
