Sorbet scoop wreath
Serves 10 | Prep 10 mins (+ freezing time)
Ingredients:
3 scoops Coles Finest Luxury mango sorbet
3 scoops Coles Finest Luxury lemon sorbet
3 scoops Coles Finest Luxury blueberry sorbet
1 Coles Finest Luxury Madagascan Vanilla Meringue Wreath
½ x 500g tub Coles Dairy Free Vanilla Coconut Yoghurt
½ punnet raspberries
Mint leaves, to decorate
Method:
1. Place a baking paper lined tray in the freezer for 10 mins. Place sorbet scoops on tray and return to the freezer, until ready to serve.
2. Just before serving top meringue with dollops of yoghurt, arrange sorbet over yoghurt and decorate with raspberries and mint leaves. Serve immediately.
Cherry Ripe Wreath
Serves 10 | Prep 10 mins
Ingredients:
1 Coles Finest Luxury Madagascan Vanilla Meringue Wreath
300 ml thickened cream, whipped
5 strawberries, sliced
125g punnet raspberries
68g twin pkt cherry ripe bar, cut into triangles
2 tbs chopped pistachio
Freeze dried raspberry powder, to serve
Toffee shards:
1/3 cup (75g) caster sugar
1 tbs water
Method:
1. To make toffee shards, place sugar and 1tbs of water in a small saucepan over medium heat. Cook, stirring 5 mins or until sugar is dissolved. Increase heat to high. To dissolve any sugar left on the side of the pan, brush down with a wet pastry brush. Bring to boil. Cook until the mixture is a rich golden colour. Remove from heat and carefully pour onto a baking paper lined tray. Completely cool. Break into small pieces.
2. Dollop cream over meringue. Arrange strawberries, raspberries and cherry ripe over the cream.
3. Sprinkle with pistachio, toffee and freeze-dried raspberries, to serve.
