*EASY* Trini Milk Barfi- Divali Sweets

Barfi is one of those must-have desserts around Divali or Eid time. It's such a rich and flavorful dessert that has you wanting more and more. This Trini version differs from the East Indian version in many ways, but I prefer ours better.
The rich taste of ginger and cardamom and the delightful taste of the full cream milk will have your taste buds jumping for joy! This is a non-traditional way of making it, for those who struggle with getting the sugar syrup at the right stage.
Ingredients:
-3 cups of full cream milk powder ( 375 g)
1/2 3/4 can Nestle Media Crema (use heavy cream as a substitute)
-1 cup of sugar
-1/3 cup of water
- 4 tbsp ginger,minced
-rainbow sprinkles
-1/2 tsp ground clove
-1 tsp cardamom or elychee powder

Hey everyone watching this in 2019! I have taken all your comments into consideration and will work on updating this recipe for you. You can skip the grating part and just use a mesh strainer/sieve or just add it to a food processor. If you're adding it to the food processor, then just crumble up the mixture instead of forming it into a ball. Hope this is helpful! Happy Diwali everyone. Wishing you love, light and prosperity.

I saw alot of comments telling you how to do it better, but I think some people don't understand not everyone may own a food processor or a fine sieve or can afford wax paper to line a dish, so using the grater was very good information. The easiest cost free way to deal with the sticking to the dish is to put it on the refrigerator a bit. Drys it up and it unsticks. I think your recipe is perfect as is.

+Vincent2wice Wow, well let me know how it turns out! A little tip: When you add it to the pot, keep stirring on low heat. Also, have a glass of room temperature water next to you and every few mins, take some of the milk from the pan and put into the water. If it dissolves, then it's not ready; if it keeps its shape and stays together, then turn it off and place into your dish (you can oil it to make things easier). I think this batch of barfi I did for the video was a little bit over cooked so do the water test and it will turn out perfect!

This was a really good tutorial. A little suggestion ... line your dish with parchment or wax before setting the barfi. Then you can just lift the whole thing out. Can;t wait to try this. Thanks!

Hi Natasha a small tip to getting the yellow stain on your greater pour bleach on the stain then soak the greater in boiling water it will get off hope this is helpful

Instead of grating or sifting, put it in a food processor with a 's' blade. It's much faster and works great

Hey I made both your kurma and barfi recipes for Divali, thank you very much for your videos you made it so easy to do. The kurma was perfect, i would like to say I am not good with averaging at all and the 3/4 can average i found a challenge (in retrospect i should have converted the grams of the tin and figure out the measurement in cups) i added too much cream, the only thing that would have made it easier was if i knew in cups preferably exactly how much to use and not just average and add too much. Nevertheless the taste was great, some ppl said it was one of the best barfi's they ever tasted. You will always be my go to person for Indian sweets, and cant wait to check out all your videos. Thanks so much good luck to you.

This is how we make it too, cook it up a bit in the pot, but we use a food processor to get it fine.

Hi what I'd like to know is did the barfi actually get hard or was it still a bit chewy? It would have been great if you crumbled the piece so we could see the consistency but never mind that I love your vids you seem to be pretty down to earth. Keep it up! Do you have any simple paneer recipes I've never eaten it and would like to try but don't want to buy a pack in the grocery and then dump it.

Hey! The cream is Nestlé heavy cream/table cream. You can find it at Walmart. Regular heavy or whipping cream can be used as well.

if you chuck the grating part... just mix all ingredients and add to sugar syrup, it gives the same result... the grating part just looks too hectic... but overall looks good

No the condensed milk won't give the same texture..it's a lot more sticky

Here's my recipe. 2 cups of Dhal besan (ground dhal) water as needed oil to deep fry 2 tbsp condense milk laichee powder to taste hardi powder for colour 2 tbsp ghee 1 cup sugar 1/2 cup water 1 teaspoon ground ginger (fresh) make the base: so you mix the dhal besan with some hardi powder to give it the colour (or add food colour). and add the water and make a pouring consistency batter. heat the oil in a pot and take one jharna and one strainer. pass the dhal batter through the jharna and let it drip in the hot oil. let it just fry in the oil till it just gets cooked and take it out with the strainer ground the mixture; using a processor or a mill, ground the fried drops of dhal into a fine mix, like cream of wheat. add ghee, condense milk, ginger and laichee. mix into a crumble make the paag; 1/2 cup water in a pot with sugar. bring to a thick, 1 string consistency and pour in the dhal mix, mix with a spoon and let the dhal absorb the paag for 5 minutes. shape the ladoos: grab a handful and shape into a ball. let cool in the fridge and serve.

Have a glass of room temperature water on hand and as it starts clumping together, put a little bit of it in the glass and if it stays together then it's done. However, if it dissolves in the water, then it needs to cook for a little longer. Hope this was helpful!

It's playing fine on my end. It will only stick if the wifi or data connection is bad.

My goodness, your accent is heavenly! Never before have I been so interested in trini cuisine! The sweets we have in England are [really] quite boring and unappealing, but yours seem like luxury; I also watched your coconut fudge type thing recipe and Im going to make it for my family at my nannys birthday!!
