Thanks for another great recipe! Made these last night and they were delicious. I've never made these sweet potato noodles before, so thank you so much for your tip to soak first, since the instructions on the noodle package didn't mention that, and I think it made a big difference. They had the perfect texture and were, as you say, delightfully bouncy! I think this will be a terrific base recipe for experimentation in addition to being perfect as written. This will be on repeat with various meats, veg, and marinades.

It's interesting how Marion presents japchae as a mid week meal, but traditionally this dish was made for special occasions. I remember my mum, grandma and aunts prepping and mixing together but we made large quantities.

Marion, your japchae noodle here is the most luxurious version I’ve ever seen. I love japchae. I live in Los Angeles, where the Korean diaspora is the largest Korean community in a major city in the world outside of Seoul. The japchae dishes I’ve eaten here do not have luxurious amounts of ingredients nor are fully seasoned as yours. We love to eat it actually w/ white steamed rice - so it’s starch on starch ! YAY !

I love potato noodles ! I haven’t made Japchae in a while …Time to make it soon! I love it with beef , but for my veggie friends …I just cook it with veggies. It’s great weeknight dish as long as I cut my veggies ahead of time and just cook at 6 pm for dinner . It’s better than take out ….and I add more beef than takeout so I can cook for 4 -5 in one dish for cheaper .

Watching from Bulgaria 🙌 I have recently discovered Korean sweet potato glass noodles since I have become sensitive to gluten (cannot eat beans either). Great tips - 1) open the package from the side in order to pull the noodles out without breaking them 2) soak in water before boiling so they can fit in the pot :D P.S. Recently I saw a short about sweet potato tortillas, but there is no recipe, I am not even sure there is sweet potato flour available here (there is tapioca starch), and would love to be able to enjoy a nice wrap or sandwich again :)

Is rice flour an option for you? In the UK, they substituted wheat- with rice flour when it was cheaper than wheat. That was, when the US was still a colony and they grew rice in the Carolianas.

Yes, rice and sweet potatoes are good for autoimmune conditions, thankfully! I enjoy so many of Marion's noodle recipes and do them with rice noodles or sweet potato noodles. Big fan of asian cuisine :) I was just really curious about a sweet potato tortill
