Like my mom and grandma made..they also included raisins and currants and added whiskey or brandy to cake...after baking they would wrap cake in buttered paper and wrap it away bringing it out each month and spritz them with more brandy and reward cake. It would be served either as cake or served in bowl with rum in white sauce...so delicious

I grew up eating dark and light fruit cake. I like neither. I still make it though because of rhe sentimental aspect. But every bite is a sacrifice of my senses, lol. I will never stop eating it though, mostly because it defines my childhood experiences around Christmas but also because long after other treats around the holidays are eaten or mouldy, the fruitcake is indestructible and inevitably abandoned by everyone else around me. 😂😂

Placed small pieces of cake in parchment paper with ends tied with tiny bows like bonbons. Both have been taken away from me and are in heaven. I never had their talent in cake making🤣. The alcohol enhances the flavour and preserves the cake. All good Christmas cakes include a level of alcohol, especially brandy 🙂

Just be careful with the addition of pineapple, the cake will go mouldy if stored for a long time. Eg, if used as a wedding cake or fed for long periods of time. 🐶🇬🇧

It's a syrup made purely from sugar and would be too hard to make as its very thick and concentrated. We used to call it treacle(not black treacle). Most shops sell it.

Would you consider a marzipan topping , covered with royal icing. This is a lovely cake recipe but entirely different from a traditional British Christmas cake. It is much lighter so everyone should like it.

@@Knittyneeds My mixer has a low setting just for combining...... you can use the 'on/off' method or pulse it just to combine everything not to over-mix it or surely not to pulverize the dough to make pulp.
