For those who dont know how great a feat he did, he made an entire new dish for a banquet of at least 500 or more people from scratch. The prep work for this usually takes a day or more and hr did it while the dinner was ongoing. Say 40 mins, 50 at best.

The subtitle got it wrong since 1:17. Master Chu suggest to serve “Joy Luck Dragon Phonix." and his friend Chef said "Using abalone, we are going to loss money!" And Master Chu says instead, "Let's control the situation right now and I will explain to bosses later."

The Chinese subtitle is horrendous. For example, at 1:16, the assistant chef said: "Using abalone (for Joy Luck Dragon Phoenix)? (Rhetorical) How much would that cost us?" The master: "At this stage, we have to improvise even if the money won't break even (refers to preemptively upgrades the dish to please the customer). First we maintain control of the situation, and then I will explain it to the higher-ups." How does that translate to "I don't know..."?

In some fancy restaurants , some dishes are good but the rest is just mediocre and has high prices because in a luxury place , ingredients are the best qualities, rare or the dish has too many ingredients. For example: shark fin soup. Chinese cuisine is love to use too many ingredients in one dish . but not always expensive 😛

Old Wen, the guy who tasted the fin, was the chef of this banquet, but his subordinates bought fake shark fins so they can’t use it to make regular shark fin soup. Shark fin is very expensive and considered a luxury dish. Master Chu, the father, suggested making “Joy of Phoenix and Dragon” to replace it, a dish that uses equally expensive ingredients such as lobsters and abalone. This was discussed at 1:16 But the subtitles weren’t translated very well. Wen had mixed feelings because although it is a worthy replacement, it’s also very costly and would likely cause the hotel to incur a net loss at this banquet.
