Thanks I appreciate that. We started making these during Covid. It’s a great way to get fact based messages out. It seems to help people which is the goal of being a doctor. So I’m thankful to be able to do it.

I'm getting a lot of contradicting information on this diet for Celiacs. Some are saying that all grains will contain gluten, but the ones with Rye, Barley and Wheat being the ones with the higher percentage and the others below that still have a percentage. Rice in particular has a low percentage but its still apparently has a percentage. This diet seems like it would be best to just avoid all grains as tough as I'd probably find it.

Any scientific paper I’ve seen notes rice to be gluten free. There are issues with cross contamination depending on growing conditions and processing.

All grains do contain gluten. But not all glutens trigger the immune response. There is a specific type of gluten in Wheat, Barley, and Rye that triggers the immune reaction. Think of it like fuel. Both gasoline and diesel are fuels, but if you put gas in your car, you are fine. If you put diesel in however, you will have problems. It's not the best analogy, but it makes the point.

@@LuxxVerum Actually it does. It's just not the same protein that triggers Celiac Disease. That type is only in Wheat, Barley, and Rye.

1.White Rice(Instant by Success) 2.Wisconsin Provolone Cheese from the Deli. 3.Sauerkraut(It's Probiotic) 4. Frozen Corn on the Cobb, but not often 5. Red Beans 6. Baked potato 7. Baked Sweet Potato 8. Rice Noodles 9. Raw Cocktail Peanuts 10. Raw Almonds Just to help you out a little

Hi, how about people with gluten sensitivity and gastroparesis? Unfortunately I have that double whammy and it's quite hard to eat a variety of foods and not fall in the trap of eating gluten and fiber :( thanks in advance!

Pretty much anything with gluten will have fiber to some degree. The bigger problems with gastroparesis are cruciferous and leafy greens. Broccoli and kale.

@@MarkCooperMD Because I cannot eat foods with gluten and I cannot eat foods high in fiber it leaves me with very few choices to eat. I mostly stick to eggs, fish, chicken, sweet potatoes, potatoes and a little bit of nuts. Somehow milk, acid foods and red meats make me feel nauseous, gassy and horribly full right after a few bites of that.

You have to avoid sweet potatoes it's still gluten. And dairy too. It can block your iron absorption. You can be anemic like me. Anyway I hope you get help and doing well now🙏❤️

If I faced this I’d keep a clear diet and take Tylenol for a few days. If constipated I’d take miralax, in increasing doses. Past the acute episode I’d focus on lean meats and vegetables. A low grain diet seems to be healthy - though I don’t think nutritional evidence tends to be as reliable as it’s so hard to accurately study.

There are loads of Indian curry options that are gluten free. You can do a rice pilaf with lots of veggies, you can do chicken and rice, you can do creamy spinach and rice, you can do chickpea curry with rice, you can do rice and beans, you can make a Mexican bowl with black beans, kidney beans and rice. Beans are gluten free so you can go crazy. Then there are lentils. But you have to make sure to buy them from places that are gluten free to avoid the cross contamination. I buy all my stuff from ethnic stores and then wash and boil as I need. I haven’t had issues so far but it is definitely more time consuming to manage celiac’s.

@@airyrelic43 Chickpeas and beans are frequently cross contaminated. You have to only eat Certified Gluten Free beans. If they are processed in a facility that processes wheat, you will have a reaction. You definitely can't trust processed curry or restaurant curry.
