As someone who eats pine nuts on a very frequent basis compared to the average American, I didn't realize they had a distinctive flavor. I assume it's because of the way my family uses them in hashweh which is heavily spiced and quite greasy mincemeat stuffing.

Couldn't help but think that myself. I'm sure Matt's got a lot of knowledge when it comes to food but it's hard to buy that he's an authority on traditional Korean food after watching this, as well as some of his other vids about Korea.

Under normal circumstances this would be a non-issue but given how his videos are a channel through which people learn about Korean food and culture, I would hope Matt would refrain from saying stuff that paints Korean cuisine and Korean society in an untrue light.

I'm a chef by trade and I live in Phoenix and I have lived in other cities and one of the first things I look for is where is the Korean Restaurants at. She chose the cuisine of the Royal Court to counter the influence of Western technique. She isn't just serving it by chance and people are saying she knows or should know Western styles.

If she's cooking royal court food of course she wouldn't be using western techniques.

HumanTres I believe it’s because when many restaurants try to create a fine dining/Michelin starred experience, a lot of chefs feel the need to go with western styles or at least influenced techniques. Also the idea of creating a true fine dining experience with Korean cuisine is a relatively new thing. So the idea is that instead this chef is embracing Korean cuisine and, while modernizing the experience, she’s sticking with traditional Korean culinary techniques.

I agree!!! If she is going to serve korean royal palace food, I want the whole experience. Do not serve my food in the wrong dishes! Serve me correctly, according to custom. I want to have a surasang placed before me, I want ALL of the sinseollo not just a knock off of it. And I'd like it to be brought in by pretty servers in hanbok. Not in a modern setting. Modern Korea is nice, but not all the time. Especially when paying that type of price. But hey, what do I know...I'm just a proud Korean who gets annoyed with this globalization obsession.
