Fun fact: In Hungarian sausage is Kolbasz (Coal-bass), wonder if the word comes from Polish or slavic languages in general as I don't actually know what's the word for sausage in slavic languages, but it only refers to a very specific style of dry and smoked sausage, but wouldn't be used for something like a Vienna Sausage or Bratwurst.

This is more of a kasewurst than a kielbasa. Kielbasa is based on a crumbly, medium grind (typically pork but any meat will do), with some finely ground beef to keep it cohesive. A finely emulsified double grind isn't really used except for parowki, which are kind of the Polish version of wienerwurst. I don't doubt that this is good, but I can't agree with the label.

I noticed a couple of comments pointing out that they were 'ruining the value of the wagyu by grinding it'. Note that it is lean wagyu, not the expensive fatty stuff. 2:04

I am in no way a culinary professional, but isn't using wagyu meat for sausages a bit redundant since you will end up adding fat anyway?

They add pork fat. Beef fat Is different so it would taste different due to the more beef fat. More the. Likely those are scraps and its The best use of them as they said they buy whole animals.

Outside Europe, esp Poland, Kielbasa is a type of sausage. In SE Asia, it is one of the most expensive European-style sausage. I love it too. 😃😃

Mikey Scott it's not from a Michelin star restaurant... It's something from a place that makes ingredients for a Michelin star restaurant and a video with a click bait title and thumbnail. At the end of the day, it isn't kielbasa, no matter how good it is or how much it costs. Its like calling ravioli and pierogi the same thing.

This is an Albertan staple. These guys are making a huge deal over a cheese smokie. Kielbasa is never that large and usually doesnt have cheese. I appreciate the creativity but don't try to dress it up. This is a waste of good wagyu beef.
