We wanted to breathe some sea air and so we decided to pop up to Senigallia, to try the restaurant of chef Moreno Cedroni, at the Madonnina del Pescatore, two Michelin stars.
The experience was worth the trip: we tasted dishes in which study and experimentation are strongly felt, without jumps as an end in themselves, but with the aim of enhancing the taste and peculiarity of the raw material, giving space for playful moments such as parmesan ice cream, freeze-dried hedgehog to crumble as cheese, or dessert that looks like a washing dishes sponge.
