During one of our last days in Bishkek, Kyrgyzstan we revisited one of our favorite restaurants in the city to eat traditional Kyrgyz food. Food in Kyrgyzstan is closely related to that of Kazakh cuisine and we ordered all of our favorites including Plov, Shashlik, Manti, Lagman & Kymyz. Traditional Kyrgzy food revolves heavily around horse meat, mutton and beef along with a heavy dose of dairy products influenced by its historically nomadic culture. Below you'll find more information about the specific dishes.
Plov (плов) - Also known as pilaf or paloo, this is a mixed rice dish that features pieces of meat (usually mutton, beef, or chicken) and shredded carrots. It is cooked in a cast-iron cauldron and it is delicious.
Shashlik (шашлы́к): shashlyk (meaning skewered meat) was originally made of lamb. Nowadays it is also made of pork or beef depending on local preferences and religious observances. The skewers are either threaded with meat only, or with alternating pieces of meat, fat, and vegetables, such as bell pepper, onion, mushroom and tomato.
Manti (манты) - These are steamed dumplings filled with ground meat and onions. You can also get vegetarian ones filled with pumpkin or potatoes.
Samsa (самсы) - This is a popular street snack. Picture a flaky pastry pocket stuffed with ingredients which include: chicken, cheese, cabbage, beef, or other fillings.
Lagman (лагман) - Laghman is a noodle dish which can be served as a soup or fried, and it features chopped peppers with a spicy vinegar sauce.
Ashlyam fu (Ашлям фу) - This is a cold and spicy soup that has meat, veggies, cold noodles and starchy noodles.
Besh barmak (бешбармак) - The name of this dish translates to ‘five fingers’ because it is so tasty it is meant to be eaten with your whole hand. It is a plate of steamed noodles and onions with meat, which can be lamb or horse.
Kymyz (кумыс) - Can I offer you a glass of fermented mare’s milk? It tastes nothing like what you’d imagine - it’s salty, fizzy and it kind of reminded me of Korean makgeolli - so give it a try.

Eating Kyrgyzstan: Traditional Kyrgyz food in Bishkek Travel Video Transcript:
So it is lunchtime here in Bishkek (Бишкек), Kyrgyzstan (Киргизия) and today we are going to be having a feast. We are going to be sampling all of the traditional dishes that we've been eating over the last three weeks because that is how long we've been traveling in the country. So we're ordering a big spread. This is probably enough food for like five or six people but Sam and I are going to try and eat it all and just showcase what Central Asian cuisine is all about. So we hope you enjoy.
So we're almost done the meal. Any particular favorites?
So stuffed.
Um, the shashlik (шашлы́к) was amazing. That was so so good. It was so juicy and they don't really put a lot of spices on the beef but it just has like that natural flavor so that was really nice. It was smokey, tender flavor. Love that. It was good. And also the rice. I'm usually not a very big fan of rice but it was really good. It was like wild brown rice so that was really tasty.
Yeah, those are two of my favorites as well. And I'm going to add that I really like the manti (манты). The pumpkin dumplings. Of course. Dumplings.
So that wraps up our feast of feasts. It was an amazing like traditional Kyrgyz meal. We ordered so much food that we're actually taking a lot of it home. This is probably enough either for three or four people and in terms of the price it came to one thousand two hundred Som which right now is seventeen US dollars. So that was incredible value. I mean we got three different kinds of drinks, we got tea, we got a liter of Pepsi, we got a liter of mare's milk plus all of that food that we showed you including the bread, the dumplings, the meat, the rice, the noodles. So you can come here and have an epic feast and it is not going to cost you a fortune.

@@basedCanada omg, 10 years that’s a lot I live in Dubai but I go to kyrgyzstan once a year, but I didn’t have the chance to go there because of Covid. There many bad news about Kyrgyzstan but it’s my home country and I miss it.

I'm fortunate here in Belarus to still get Uzbek and Kazakh food (and yes, Kyrgyz food). Manti, lagman, shashlik, plov, etc. Such amazing food!

The best ones are acutally Kyrgyz in Chicago, called Jibek Jolu and Bereke. Their noodles are hand stretched for each and every order :)

I lived in Bishkek from 1998 to 2005 ! Samsa is my favorite food by far! its so juicy and delicious.. I also recommend you guys to try out Kyrgyz "Gamburger" sandwich which is fantastic its just like western hamburgers but instead they use shawarma kebab meat .

It's an amazing place. I'd actually recommend Kazakhstan far more than Kyrgyzstan. Many nationalities don't need a visa for KZ. It's a magical, magical place!

âllo , for fellows canadians need a visa for KZ , I was born in KZ , if you'r comparing Kygyzstan vs Kazakhstan ,the best choice i would say is Kyrgyzstan and Uzbekistan .In Kazakhstan very modern country and expensive !

The bread is treated with great reverence and is very good. The Манты and Самсы is also very good. Палов is also very tasty.

Samuel & Audrey They are all over the US and Australia. Men in Cornwall were miners in years past. When the mines ran out they moved to the US and Australia to work the mines there and brought along their delicious Cornish Pasty. It's kind of like a calzone except instead of having Italian food in the middle these contain English ingredients like beef, potatoes, onions, rutabagas.

The Mongols were the ones who brought manti (actually pronounced more like mantu) to Central Asia & Turkey during the 13th century, and the term "manti", much like the Korean "mandu", originally came from the Chinese term for buns - 饅頭 (mantou). They are also known as "buuz" in Mongolia and parts of southern Siberia today, and this term also came from another Chinese term for buns - 包子 (baozi). Lagman on the other hand comes from the Chinese term for pulled noodles - 拉麵 (lamian); which was also brought into the Korean language as "ramyeon" or into Japanese as "ramen".

Try food in the "Supara" restaurant in stone and wood hunts and their delicius beshbarmak. And also visit Ala-Archa nature park not far from Bishkek

they ate at Jalal Abad chaihana(Tea house) which is situated on Togolok Moldo street between Kievskaya and Chui streets,I used to live around there,and we would go there for our breaks.Can order some beers too.they cook ok.but Kyrgyzstans best and traditional meal is \Besh Barmak..try that next time.))Not for a weak stomachs though.Thanks for bringing back memories.last visited there in 2006( miss u my home city Bishkek....

Wow! Looks delicious. Everything you guys had is regional food in Central Asia. Uzbekistan is the center of the best central Asian food. Any plans to visit Uzbekistan? If you do check out bazaars in Tashkent.

Shashlik can be many things--lamb, chicken, fish, pork, veggies, ground lamb (lulu kebab). Sakseul is the root in Kyrgyzstan and Kazakhstan that makes the difference.

Uzbek plov is the best! Each country creates a nice version, but Uzbekistan plov takes the cake.

Each country along the silk road added their own flair. Uzbek is considered a sort of standard bearer for central asian plov. What it has in it is amazing. I'll post a video next month on our time there living in a yurt camp in the dessert and eating their plov. Julie Du if you are going there don't just go to one city try Osh city. There is local street food that's not less tastier than those foods in Bishkek. Hope you will enjoy it! ✌️✌️✌️✌️

Those манты you were eating didn't look like the ones most places in Bishkek or the rest of Kyrgyzstan serve them. Interesting. You should try some Bishkek ones. Where did you get your ones.

Samuel and Audrey - Travel and Food Videos most манты are usually folded in a different way, (I'll send a link to a picture) . There is a few ways people make manti but the way I cook them are different to the ones on the video. I think it's a regional thing for the place you visited. If you want to try lots of kyrgyz food than I recommend going to Bishkek and finding a place called Fayiza (файза). They do some of the best food in the country and are quite tourist friendly as quite a few of the waiters speak English, Russian and Kyrgyz. If you want a big portion of food to try just ask for, "svoy sami haroshy yidda dle turistiy kto hochit kushaty traditionalni Kyrgyzski experiencey" and if you want a drink that tastes slightly better than kumis ask for "кompot"

Biscuitface they are in Jalal Abad Ashkana. So it's ashkabak manti. I think you guys made best decision to have Jalal Abad food. We cook the best any Kyrgyz food. Deliciously delicious you can't resist when food made by tyshtyk girls.

We did not enjoy it. We did find a lot of things that we enjoyed that we would never had imagined. Horse is now our favorite meat of all meats we've tried (and we've tried many meats), I regularly ate dog (maybe in Korea you've had that experience), and we would totally eat the sheep head + brains again. :)

Manti- you should eat with your hands 😀 no need to use fork. Lagman- looks strangeto me🙄 there should be more souce. Plov- in traditional plov should be rice, carrots and meat. No peppers.
