In older times, wine was more juicy and less fermented. So, it went well with foods. Modern-day wine is not the same and can ruin it. Instead, think of more spiced wine or cider you get in Christmas. You can make a modern-day equivalent by mixing grape juice, sugar and spice to regular wine, and use this mixture to flavor the food. (I also love your mom's - "back in the day, there was also less wastage" - lmao). Excellent video. Subscribed to your channel.

To add to this comment. I would very very strongly avoid a strong full-bodied oak-aged wine that was aged for a long time. Something fresher would pair much better with dates and seeds. The oakiness of an aged wine would overpower the light seeds. I would also rather add honey since she is already drinking it with vinegar. Perhaps a light rose would be nice.

She's right you know. There was less waste. However if you lived in Rome, your water was supplied by the aqueduct, so you had more water than anyone else on the planet. Rome had water out the waz. Water means health, wealth, joy, luxury, and status. The Romans knew this.

The other cooks are Romanian and say that back in the day, her grandmother was cooking some cakes on fire that tasted exactly like the Libum cakes. The taste is so similar that she got goosebumps after trying the Libum. And the way she describes how her grandmother cooked them, it's exactly how people would cook in the past, in the countryside in Romania. That's a very traditional recipe and way of cooking that is almost gone now. Only our grandmothers know it today if they are still living.

Growing up in Italy, I remember they made us studying different aspects of ancient romans in school. I've learnt that when it comes to food, actually, they used to mix so many different types of ingredients and acidities (like you can perfectly see in this video), and in cases like big dinners/banquets people would actually suffer from this, feeling sick and even passing out, or worse, in some cases.

In the US, a lot of more traditional farmers/homesteaders make a drink called Switchel or Haymaker’s punch. It’s a mix of a small amount of apple cider vinegar, ginger, natural sweetener (mostly molasses or honey), a little natural salt mixed in a big glass of water. It’s an amazing drink to replenish electrolytes on a hot summer day. It’s also a digestivo. It goes back to the 1600s

Rosie, I found this video fascinating. I'm also obsessed with the Roman Empire but not to the extend where I would sample their food :) I'm the son of Italian immigrants from Calabria. They arrived in Canada (Northern Ontario) in the early 50's after the war so that means I'm old. Anyway, I really enjoy your videos and so does my 92 year old Mom. We play some of them when she's over for dinner. Keep up the wonderful work.

I honestly love your passion and your relationship with your mom is absolutely lovely. I loved how she came to your rescue. Thank you so very much for sharing something this dear to you. The posca recipes I have there's - at the very least - three times more water than vinegar! No wonder it was horrible. 😅 Real slowly fermented garum isn't quite that bad either. It's more like Thai or Vietnamese fish sauce. "Colatura aclici di Cetara" sauce is one product close to ancient garum and it's absolutely delicious! I use it in the traditional garlic-chili-parsley spaghetti. They also make real garum in Spain but so far I haven't been able to aquire it.

Yes, when I saw how much vinegar she used, I knew it was too much! If she used a splash or two, honey, and water, it would taste a lot like kombucha--in my opinion. That's what apple cider vinegar drinks taste like to me.

Its great! I'm indigenous and eating foods that my ancestors ate and cultivated for thousands of years really gives me a cultural look on their lives. Plus for so many people who are allergic and have intolerances to certain foods, eating their ancestors' diets help with inflammation and health regulation!

If anyone wants to see ancient Roman food done very well and very authentically, so it probably actually tastes good, I'd recommend Historical Italian Cooking here on KZbin. Tiny channel ran by an Italian couple with lovely accents who are also translating ancient and medieval cookbooks!

Posca is really good, but you don't use a ton of vinegar. Mix one part grape juice and one part water, then just a splash of vinegar to make it taste a little bit tart. It's super refreshing on a hot day!

My grandfather also had a trauma, as a child he had to help out his grandfather with the honey processing. So in the summer where as the other kids played outside he had to stay inside and spin the honey extractor. He didn't like it when my father informed him that he started beekeeping.

Thank god for modern Italian cuisine. Actually, lets just appreciate modern cuisine period haha! I could not survive a day in ancient times, let alone ancient Rome. The fish sauce you were describing reminds me a lot of Vietnamese fish sauce. I went to Vietnam where my dad's from a few years ago, and we visited some family friends. In their backyard, they were fermenting barrels and barrels of fish to make fish sauce. It stank so bad lol, but fish sauce is such a core to Vietnamese cuisine. It's interesting how completely different cultures have very similar things.

You probably woulda just got used to it or grown up with it. What I like most is that I can get food from other parts of the world. I never would have had Kimchi or any cabbage dish or even potatoes if not for the modern global food movement.

Yummy ... It takes a while to get used to fermented food - our digestive systems simply cannot cope with the huge amount of vitamins in them. Just love all this stuff ... Stench is a sign of QUALITY ... ! 😂🎉

This is one of your best videos!! Your Mother is the BEst!!! She is so indulgent of you even though she tries not to show it!!! She loves you!!! This was so sweet!!! I'm so glad that your tried your best to re-create a Roman Daily Menu. This was a great learning experience for you!! I was a little disappointed that you didn't use some of the skills that you would have picked up from your Grandmother and Mother over the years!! That porridge that you made for Breakfast could have been salvaged with a few tweaks of Culinary expertise!! Seriously, Faro is the Best!!! I had it as a Savory dish with beans and capers when I was in Firenze and it was Delicious!!! SHould have gone savory instead of sweet with it!!

This convinced me to go to Rome not for the ancient food but for the modern day food. I might want to try what the Ancient Rome food would taste like. The food in Ancient Rome looks like a last meal you would eat on your deathbed. I want to travel to Italy now. Hopefully next year 🇮🇹🫶🏻

When I heard the Italian national anthem, I was reminded of our school activity back in grade school to celebrate the United Nation’s Day. Our class was assigned to sing the Italian national anthem and I am from the Philippines 😅 It was definitely an epic experience 💚🤍❤ It’s also very nice to see that your Mom is very supportive of you working in her kitchen 😁

This was seriously the best video ever!! I am also obsessed with ancient Rome and have visited so many of their ancient sites (Pompeii, Herculaneum, Rome, Ostia), so I was really excited to see you making ancient Roman food. But it was even better than that, because this video was also hilarious and I loved watching you and your mom work together. I love all of your videos but this may have been my favorite!

7:33 those are larvas of almost like little flies that get in dry foods such as rice/flour/cereal etc if it was opened or near an opened one U shouldn't be really using it anymore cause there might be some of their parts in the food (unless checked) but yea They can be a real pain in the ass when u store dry foods in cabinets cause u'll have to throw most out if it wasnt sealed shut
