Ancient alcohol, like wine and beer, actually had a far lower alcohol volume than modern drinks. That's why they were able to use it so liberally - because it wasn't optimised to get you drunk as fast as possible, like it is now. It was much more of a normal drink. Wine would've been a lot more like fermented grape juice with a kick than modern wine. Also, dessert wasn't the same concept to ancient people that it is to us. The world at large really only got access to pure sugar in the 1500s - before that, the concept of a super sweet dessert didn't really exist. The sweetest thing you ever got to eat was fruit and honey (which is why they used honey in everything, btw). So it makes sense to me that they would put garum in their desserts - because it's essentially salt, and they likely would've been using the salt to give it extra flavour, because they couldn't use sugar to do that.

Chicken feet are basically just collagen. I personally don't like them myself but it is good to eat them now and again because the collagen will help you with your joints and your skin
