The target of this catch and cook was Abalone! The fishing limit is three abalone per person per day and rules are strictly enforced. If you eat and abalone on the beach like I did, you must consume the entire thing. It's illegal to transport abalone outside of it's shell. Anyway, I wanted to try a recipe for this sea snail in two ways. Cooked with butter, salt and pepper, and raw fresh from the ocean. Watch til the end to see how it tastes!

3:30 I didnt do researche but Im a biologist and Im pretty sure its the fact that they eat crabs and clams. Many crustacea and mollusca have Hemocyanin as oxygen transporting protein which is blue while binding oxygen and colourless when not binding oxygen. So the fish probably somehow stores the Hemocyanin in his muscles. That would also explain why the meat turns white when cooked: the Protein and therefore also the Hemocyanin denature and "lose their function" which leads to the loss of the blue colour. Hope I could explain it well... english isnt my first language :)

Matt's, I free dive and scuba. The proper weight ratio should have you neutral buoyant. This way you don't exert unnecessary energy to get down, stay down, or return to the surface. Relaxing greatly reserves your air. Use your fins more then arms to move around.

You can remove the guts, put the whole abalone on a flat surface, and whack it hard with a rock. You will see it tense up and then relax. Tenderized. I like wasabi and shoyu with mine. Raw or cooked. Try cube it up with shoyu, butter, green onions, garlic. Put it all in the shell, wrap it in foil, and put it on the coals for 15 minutes.

Lings and cabs have pigment in their bile, called Biliverdin, which gives them the blue-green color. It is still up in the air as to why some fish will be more/less colored than others. Also, I'm 90% sure the color goes away when you cook it just because the compound breaks down when exposed to high heat. Love your videos man, thank you!!

The pigment colors the blood, which SEEMS to be the reason it circulates through the body. Not really sure. It's pretty cool though!

The meat in some fish is blue because their blood is blue. Their blood is blue due to the amount of hemocyanin in the fish's blood

My Dad and Grandfather used to bring home some whoppers to eat. We always baked them after the tenderizing session in our Lafayette home's back yard... Then we would use the shells to trap insects and see if they would come out of the holes!

MrBigT It’s been completely outlawed in California now as well. The purple sea urchins killed off all the kelp in turn killing off a majority of the abalone.

@@LostCause36 i'm not sure if at the time it was already in progress but they do encourage people to catch and/or eat sea urchin because of this exact problem, outdoor chef life talks about it all the time

I made some fish the other night. Followed your recipe: a little butter, fish filets, and avocado. It was SO GOOD. Even my kids ate it.

My suggestion is to season it right after you take it out of the pan. Salt, white pepper, garlic, sauce. Great video. Always enjoy your choice of videos. Make it a great day.

Hey Matts, great video. It probably took a little extra courage to get back in that suit and dive for Abalone, good job and always good to have a dive buddy. Hey guys, I was watching you guys eating sea urchins. I am a native New Zealander. Sea urchins are a delicacy here. We eat them raw, in sandwiches or especially on toast. Lovely on toast. We access the orange roe, or whatever it's called, by placing the urchin on a firm surface and smacking the shell across the middle, preferably with a long blade tool/knife, so that the shell splits in half. Then you can access the edible roe. Beautiful. Happy eating. Also we eat abalone raw, fried or barbecued. If the stomach bag is white, we eat that raw. If green, it is still edible, but prefer white ones. Happy fishing guys.

I remember eating Abulon cooked in butter in Ensenada, Baja California when I was little. Love abalone, its a delicacy for sure. Awsome background scenery.
