A few years ago my husband and I were living off of about $20 a month for food with 2 kids. Sometimes 4 if my stepkids were over. My go to cheap meal to make was a BUNCH of rice, mixed with some diced tomatoes, corn, and black beans and usually some canned chicken. I made a huge pot of it and we would eat it on tortillas and I'd wrap them and bake them with cheese on top. I'd make little burrito or taco bowls, I'd sometimes use macaroni instead of rice. Basically whatever WIC gave us is what we used plus $20. I had to get SO creative. Thankfully our budget now is about $400 a month for our family of 7. I do utilize food giveaways and pantries as often as possible if needed. There is never any shame in that!!! If anyone reads this, know that THAT is who and what they are there for! ❣️ Thank you Jordan for helping families know they can still eat good for cheap!

Monday I made baked chicken thighs and broccoli with a side of rice. Wednesday I put the chicken and broccoli in the air Fryer to crisp with more seasoning. Shredded the chicken thighs in my blender. Put it all in pasta with Alfredo sauce. Added some garlic bread on the side. I was super proud of myself for reusing leftovers!

I try to be creative but your videos help a ton! Just a tip from someone who has worked in the restaurant business for years. When storing meat and other items, you want the meat on the bottom shelf and everything on top. That’s so if anything happens to the freezer and if the meat starts to thaw, the juices don’t drip onto the other foods that can be saved. It’s also so there isn’t a cross contamination. It’s just a precaution and don’t want those meat juices dripping on the other foods. Just a friendly tip! Love your ideas and your videos!

Freezer casseroles saved me! So many things freeze very well. I also froze plain cooked shredded chicken, cooked ground beef and cooked ground sausage. I also made a giant pot of rice and froze that for individual meals! I keep cheese in my freezer. I keep frozen veggies on hand. So many ideas to throw together. Stir fries, pastas, casseroles. I just had my third! Congrats! My rule of thumb is to double what you’re making for dinner and freeze it. Within a week you’ll have a week’s worth of food without much prep work :)

Just a note on food storage. Raw food should always be stored under prepared food to prevent drips leading to contamination. So icecream on top, beef in the middle & poultry always goes on the bottom. Great job, Jordan! You've inspired me to clean out my freezer yet again.

Just another note - we keep some frozen cheese pizzas on hand and when we have chicken already cooked and needs to be eaten - we heat it enough, add the BBQ sauce and then put it on the pizza - it's a great way to use the meat and spice up a plain pizza. Some times I do that with leftover steaks too

I loooove how you stock up on freezer food, I was doing it with your advise, “one for now two for later”, and getting meat and chicken when available at good prices…. Little that I knew then, some neighbour pulled my electrical switch down as I was gone for a week vacation, 😢 i cried so much for all the waste, I was able to still recover some food but felt so angry. I'd use the frozen burritos for smothered burritos with enchilada sauce I even make them in the Crock-Pot spray bottom with cooking spray put a small amount of enchilada sauce out salsa in bottom of CP add burritos to with rest of can sauce or jar salsa cook on low 2-3 hours add cheese on top replace cover for 7 minutes to melt enjoy ❤️

One of my family's favorite casseroles: 1/3 starch (usually potatoes, but I've been known to use macaroni or rice), 1/3 cooked meat, 1/3 vegetables. Classic combos: macaroni, ham, and broccoli; rice, ground beef, and canned diced tomatoes with some browned onions on top; small potatoes, chicken, frozen carrots with peas. Make up a mornay sauce (bechamel with melted cheese in it) vary the cheese and spices to compliment the dish, i.e. cheddar with ham and broccoli seasoned with plain salt and pepper, combo pepper jack, Monterey Jack, and taco seasonings for the ground beef; swiss cheese and a spoon of sherry for the chicken. It is a foolproof casserole formula. Easy, low effort, highly popular with munchkins, and nutritionally balanced. I've also used bits of leftover meat combined, like breakfast sausage with ground beef and chopped ham, etc. Uses up leftovers without the kids catching on. I've also substituted marinara sauce and enchilada sauce for the bechamel. It always seems to work out. I was a foster mom and had to feed 5 ravenous teens in a hurry - otherwise elaborate and expensive pizza orders would mysteriously be delivered; invariably ordered by, "Not me, Mom!" I could get dinner on the table in about 60 minutes (starting from scratch and using the oven), 30 minutes (all precooked ingredients also using the oven); or as little as 20 minutes using the instant pot. You can fry those egg noodles and some oil and throw some cinnamon and sugar mix on them and have homemade cinnamon twist from Taco Bell. I used to work there we use egg noodles to make the cinnamon twists

Have you ever made Pepsi Potroast? We love it! My family tries to make it at least once a month, but end up with leftovers, so 1 crockpot gives us about 3 meals for 4-5 ppl!! • roast (whatever fits in your crockpot) • Pepsi (or Coke, but diet, vanilla, or cherry will not work. I haven't tried with the kind with real sugar. I wonder if Dr. Pepper would work...) Just enough to cover the top of the roast. Usually around half of a 2 liter bottle. • 1 large can of cream of mushroom soup. • 2 envelopes of French onion soup mix. • Salt & Pepper to taste (I usually add Garlic Powder also, but that's just my preference) We usually serve w/ seasoned little potatoes or on top of garlic or cheesey mashed potatoes. Currently making BBQ chicken breasts in the Crock-Pot... 😁 I see a quick meal with those freezer Chimichangas you've got there: serve with salsa rice on the side. A great way to use up a partial bag/container of rice and jar of salsa and make plain rice more interesting, and easy-peasy. Make rice as usual and mix in salsa of choice to heat through. Shredded cheese on top makes it extra yummy. 😁

I had the best chicken the other night. It went like this, chicken leg quarters 4, crockpot s&p, add bag of stuffing over top of chicken, can cream of mushroom, 1/2 cup sour cream, 1/3 cup of water mix all that put over top of stuffing. Cook high 4 hours. It was sooooo good. Give it a try. Just found this channel, still need to watch more lol

We do what we call 'fishy rice' we put like 4 portions of rice and three portions of frozen fish into the instant pot on the rice setting ( skin side up) let it cook then take off the skin of the fish when it's done add some veggies (cooked) soy sauce and sesame oil. Mix it up with a fork.. It's tasty...

We just bought an 8th of a cow and since the organic ground beef we bought was super lean, we add a pound of ground pork to it. YUMMY-we make chili, taco filling, shepherd's pie, w pasta, etc. Chicken idea. Thaw enough for you family. Put into pot w water, barely covering the chicken Add whatever seasoning you like, salt/pepper Onions, garlic and any vegetables you like, potato cubes you can add a Goya packet or a pinch of Adobo/tablespoon Better than Bouillon Cover and cook on low flame from 40-60minutes. Slow and low *add a little frozen seasoning (below) Seasoning to Freeze: one of the following in a blender -green bell pepper, cored, cut in coarse pieces -bunch of rinsed cilantro -head of garlic, peeled -onion, peeled, cut -cup olive oil -1 teaspoon capers -1 cup Spanish olives w pimentos Grind up and freeze the paste flat or in ice cube trays *When you cook, you can add some of the frozen paste to your cooking/GAME CHANGER(fantastic for stews/taco meat/chicken)

You and your family should be proud that you made a dent in that freezer by "getting rid" of quite a bit of food to make room for a 1/4 of a cow. I'm pretty sure you've all had your fill of chicken for a while. I would definitely make up one of the roasts for St. Patrick's Day (Corned Beef), and save another for Easter Sunday dinner. I never use up sauce packets from meal kits from Trader Joe's and Aldi. I have a lot of soy sauce that was meant for the vegetables . I marinate chicken with one part marinade and 2 parts stock. ( The sauces tend to be very salty so I water them down with stock. )

Thank you for giving me ideas for the things in my freezer! I need to eat more fish so I have had salmon in mine for a bit with no idea what to do with it 😅 Now I know. I had no idea how to make cheese sauce either!!

Hey are you sure your instant pot doesn’t have a slow cook setting? Mine has one but it super old so maybe that’s no longer a thing.

I do Freezer Friday, where we take something from the freezer and make plans to eat it in the next 24 hours. Weekend are easier for me to cook.
