My Mum (RIP in April) used to make something like this back when were kids in the '70s strictly birthday and party food only. She used cornflakes and plain salt crinkle cut potato chips 50/50 and use to egg them onto the chicken. She crushed the breading between two sheets of parchment with a rolling pin. She baked it in the oven and it was great. It was my late sister's birthday go to until she left home. So long Mum, so long Sis, and so long my boy Sage who loved it too.

Actualy, the secret is to flash fry the Chicken for about 3-4 minutes and then finish cooking in a 400F oven for 45 minutes. Turning every 15. You get the chicken fully cooked, not too brown, and still moist. Also, let the flour set for 10 minutes before the egg wash. It gives the flour a chance to absorb the moisture from the chicken and properly adhere.
@BubblegumLightsaber6 ай бұрын
Cornflake chicken is nostalgic for me (even though I haven't had it in probably decades), my mom used to make it (also rice krispie chicken, which is the same thing but with rice krispies) when I was growing up in the '80s and '90s. I think the recipe she used was slightly different, iirc she used mayo as the... sticking agent? and I don't think she removed the skin. Also it was baked in the oven without frying.

Cornflake Chicken used to be printed on the side of the box of Kellogg's Corn Flakes. My mother made it all the time. Crush the cornflakes until fine, add poultry seasoning, salt and pepper. Dip the chicken in egg and milk wash. bread it with the crumbs. Place it on a foil lined cookie sheet and bake at 325 until done, about an hour. Turns out crispy without the deep fry. I line the cookie sheet with foil and bake it on the rack that fits the cookie sheet sprayed with oil. That way the bottom gets crispy also.
