Here's a written recipe that I have culminated from watching a few Eech recipes on KZbin (: Armenian Eech Recipe Ingredients: 1 batch mint 1 batch green onion 1 jalapeño or anaheim pepper 5 tomatoes 1 white onion 1 bunch of scallions 2 cups of #1 size bulgur 1 tablespoon tomato paste 2 tablespoons pepper paste ½ cup lemon juice ½ cup olive oil ½ tsp cumin 1 tsp of sumac 1 tsp sugar/molasses (optional) Salt to taste (pastes already have salt) Directions: Grate 3 tomatoes, set aside individually. Chop white onion, set aside individually. Chop parsley and mint finely, set both aside together. Chop the one bunch of scallions, set aside individually. Chop remaining two tomatoes, set aside individually. Chop the Jalapeno finely, set aside individually. Saute the onion for 5 minutes with olive oil, stir occasionally. Add jalapenos and saute for about a minute. Add the grated tomatoes and allow the mixture to come to a boil. Add the bulgur, tomato and pepper paste, lemon juice, cumin, sumac, as well as salt and sugar (both optional). Mix until homogeneous. Add chopped tomatoes, herbs and scallions. Cover with lid and let rest for 15 minutes. Serve with lettuce leaves, and eat like you would a lettuce wrap or eat eech as is.
