I tried making this recipe & like me, my biscuits were too sweet lol! They also stayed very soft until they cooled. I'm pretty sure I didn't add enough flour. In any event, these were such a treat for me -even with plain black tea. Thank you for showing us how to make them.

I understand you find the cookies too sweet, but it's worth noting that others who have tried this recipe didn't mention the sweetness being an issue. It might be a matter of personal preference. If you prefer less sugar, you can definitely reduce the amount. Cookies are quite forgiving when it comes to sugar content-it won’t ruin the recipe. Try cutting the sugar by a quarter or a third to suit your taste. Regarding the texture, the cookies are designed to be soft right out of the oven. They should be firm enough to hold without breaking but will harden slightly as they cool, remaining soft inside. If you follow these adjustments, I hope you'll find the cookies more to your liking!🙂😊

Caster sugar is like white sugar, so if you don't have icing sugar, you can use a blender or food processor... just blend the white sugar/caster sugar until it is a fine, fluffy like Icing sugar 😊
