Hi Chris! Tried this recipe yesterday. Delicious! Here in Argentina scotch bonnet is not easy to find. I use a fresh cayenne pepper instead. The dish was great. I didn't know the tip of frying boiling eggs. It gave a nice burning touch to the eggs. Congratulations on your channel.
