Perfect Eggless Donuts Recipe
Ingredients
For the Donuts:
250g all-purpose flour (maida)
20g milk powder (optional, for richness)
50g sugar
1/2 tsp gluten (helps with texture)
1/4 tsp salt
5g instant yeast
170ml warm milk (or water)
40g butter (or oil)
For Frying:
500ml oil (vegetable oil or any neutral oil)
For the Chocolate Glaze:
100g white chocolate
1tbsp sunflower oil (or butter)
100g dark chocolate
1 tbsp sunflower oil (or butter)
Instructions
1. Preparing the Dough:
In a small bowl, mix warm milk (or water), sugar, and instant yeast. Stir until the sugar dissolves and set aside for 2-3 minutes.
In a large mixing bowl, combine the flour, milk powder (if using), gluten, and salt. Mix well.
Gradually pour the yeast mixture into the dry ingredients and mix until a dough starts to form.
Add the butter (or oil) and knead the dough on a clean surface for 15-20 minutes until it becomes smooth and elastic.
Place the dough in a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 to 1.5 hours, or until it doubles in size.
2. Shaping the Donuts:
Once the dough has risen, punch it down to release the air.
Knead the dough again for 3-4 minutes to smooth it out.
Divide the dough into 8 equal portions. Roll each portion into a smooth ball using the palms of your hands.
Flatten each ball slightly, then use your hands to shape it into a donut. To create the hole, use a small round cutter or the back of a cake nozzle.
Place the shaped donuts on a parchment-lined tray, leaving enough space between them for rising.
Cover the tray with a cloth and let the donuts rise for 30-40 minutes, or until they puff up.
3. Frying the Donuts:
Heat oil in a deep pan or wok over medium heat until it reaches 350°F (175°C). You can test by dropping a small piece of dough; it should bubble and rise to the surface.
Gently place 1 -2 donuts into the hot oil at a time. Avoid overcrowding the pan.
Fry each side for 2-3 minutes, or until the donuts are golden brown and cooked through.
Remove the donuts using a slotted spoon and place them on a paper towel-lined tray to drain excess oil.
4. Preparing the Chocolate Glaze:
In a heatproof bowl, melt the white chocolate with 1 tbsp of sunflower oil (or butter) over a double boiler or in the microwave. If using the microwave, heat in short bursts and stir frequently to avoid burning.
Once smooth and shiny, dip the top of each donut into the chocolate glaze. Let the excess drip off.
Place the glazed donuts on a wire rack to set. Optionally, sprinkle with chocolate chips, sprinkles, or powdered sugar.
5. Serving:
Let the chocolate glaze set completely before serving. Enjoy these soft, fluffy, and chocolaty eggless donuts with your favorite beverage!
Tips:
For a variety, you can add fillings like jam or custard before glazing.
