Thank you for this new version. Just finished frying these, and I can testify that they turned out perfect, just like when I used your recipe with 300g bread and 100g plain flour. The only thing is I like the version where I measured the dough first cos I got a few wonky ones with the cookie cutter. My kids have now put in their order to fill them with jam for my next batch 😀

you can make approximately 10-12 medium-sized donuts, depending on the size of your cutter. If you make smaller donuts, you could get more, and for larger ones, fewer.

I’ve made donuts a few times before but I have not tried your recipe. I have two questions, how do you keep your donuts soft and fluffy? After a few hours, mine get kind of stale. Also, when making glazed donuts, how do you prevent the donut from absorbing all of the glaze and leaving behind a soggy donut? Thanks in advance!

The key to soft and fluffy donuts lies in the dough and the frying process. In my recipe, I use high-protein bread flour, which helps create a light and airy texture. Also, I knead the dough until it passes the windowpane test, ensuring proper gluten development for structure and softness…. Frying at the right temperature (150°C to 160°C) is essential. If the oil is too hot, the donuts will cook too quickly, leaving the inside dense. If it’s too cool, they’ll absorb too much oil and turn greasy… To prevent donuts from going stale quickly, you can store them in an airtight container after they cool…. For glazed-Let the donuts cool completely before glazing them. For glazed donuts, prepare a thicker glaze to create a nice coating that sets on the surface… Let me know how it turns out when you try my recipe ….thanks

Proper hydration and gluten development are essential for light, fluffy donuts!… -Use precise measurements for liquids and flour. -knead until dough becomes elastic. -Work in a cooler environment or chill the dough for 5-10 minutes if it becomes too sticky. -Always weigh ingredients accurately. -if too sticky add small amounts amount of flour (1 tablespoon at a time) -Accept slight tackiness as normal. When I say the donuts “double in size” after shaping, it refers to the second proofing or rising stage. Here’s how it works:After shaping the dough into donuts you leave them to rest and rise again.that makes the dough expand and become airy and fluffy.Over time, the donuts increase in size-about twice their original size-as the dough rises. This is what I mean by “doubling in size.”

Look in the baking aisle of grocery stores or online from.Always check the expiry date. Dissolve 1 tsp sugar in 1/4 cup lukewarm water, add 1 tsp yeast, and let it sit for 5-10 minutes. If it froths, the yeast is active. Store in an airtight container in the fridge or freezer to keep it fresh!

If it foams and bubbles, the yeast is active. If not, it’s inactive and should be replaced. Always check the expiry date and store yeast properly in an airtight container in the fridge or freezer.

Gluten-free flours can work well, but they often need a binding agent like ( Tapioca Starch 15-20% of the total flour weight)If you try this recipe with a good gluten-free flour blend , you may need to adjust the liquid slightly, as gluten-free flours can absorb moisture differently.
