EGGPLANT AND POTATO CURRY || VEGAN RECIPE

INGREDIENTS
3 tbsp of mustard oil
1 small bay leaf
1 tsp of cumin seeds
1 tsp of fenugreek seeds
4 cloves of garlic, sliced
1 large onion, sliced
1 tsp of ginger garlic paste
2 medium size eggplants, cut into cubes
3 medium size potatoes, cut into cubes
2 tbsp of tomato paste
1 tsp of ground coriander
1 tsp of ground red chilli
1/2 tsp of crushed black pepper
1/2 tsp of ground cumin
3/4 tsp of ground turmeric
salt to taste
some chopped coriander leaves
NOTE - Adjust the spices according to your taste.

Garlic and onion are plants so they are vegan. There might be some vegans who might not eat onion and garlic, but this is most likely due to personal likes and dislikes

Onion and garlic is vegan. People who belong to Jain religion do not eat garlic and onion.
