Eggplant Chutney | Village Style | Recipe | Vegan | How to | Belizean East Indian
Sometimes my mom would make us vegan meals and this is still one of many of her deeeelicious meals! Our Village Style Eggplant Chutney aka Eggplant Choka goes perfectly with coconut milk white rice!
The All Time Best Village Style Eggplant Chutney Recipe!
3 lbs Eggplant
5 Medium Red Tomatoes (about 1 1/2 lbs red tomato)
1 Medium Purple onion
1 Cup Chopped Cilantro
1 Habanero Pepper or to Taste
1 to 1 1/2 Large Limes (squeeze juice)
3 to 5 Tbsp Coconut Oil (to taste, we love coconut oil so we always end up adding more)
1 tsp Tsp salt or to taste
Note: Heat comal on low to medium heat (over medium heat is too hot)
