Hey everyone! I was reading the comments and saw so many people asking for an Eggplant Parm recipe so I had to do it! For this recipe, my friend from ‪@dancingwiththestars‬ ‪@Heididamelio‬ came to cook with me. I had so much fun making this with her. There's nothing better than cooking with your friends and family in the kitchen!

Ingredients-
Two Eggplants
I teaspoon salt
¼ teaspoon freshly ground black pepper
½ cup all-purpose flour
3 large eggs
I cup dry Italian-seasoned breadcrumbs
½ cup extra-virgin olive oil, plus more for the dish
3 ½ cups Homemade Tomato Sauce • Italian Sauce Recipe |...
2 cups (8 ounces) shredded fresh mozzarella cheese
½ cup (2 ounces) freshly grated Parmigiano-Reggiano cheese
2 tablespoons chopped fresh Italian parsley for garnish

Now that my garden produced lots of various Cucuzza and Zucchini I am making Zucchini Parmesan a lot more and tons of fried zucchini bread (fried breadcrumb cakes), Alot of people in my family taught us use the left over egg and bread to make the breadcake on top of the stove. But I add shredded zucchini and lots more cheese and EVERYONE loves it. Even the men in my house who are more picky meat eaters

There are no breadcrumbs in eggplant parm, except in America. In Italy you dredge in flour and then egg and fry. Then layer them with sauce and tons of parm sprinkled on each top of each layer of sauce. The magic is balancing the sweetness of the sauce with the saltiness of the parm. No mozz, no breadcrumbs. Also you salt in a sieve with weights for a 1/2 hr (can use heavy cans) to remove any bitterness, not necessarily moisture.

I love this and I’m becoming more obsessed with your channel Teresa! I think if this were to become a TV show I could see Teresa do her own Jersey version of the “Barefoot Contessa” Each episode Teresa would be cooking for her family and friends.
