I'm thinking Gaius is the reason Radahn wanted to keep riding his trusty steed Leonard. In his original fight in the base game he's missing his feet too, maybe he permantently locked himself on to Leonard as a way of empathizing with his friend and mentor Gaius. It checks out with the kind nature of Radahn.

That or he lost his legs because of the Scarlet Rot Radahn genuinely did care for Leonard, but i don't think he would chop off both of his legs for him

Radahn loved his noble steed and studied gravity magic so he could continue to ride him after Radahn got so large. Then he battled with malenia and lost his feet.

I consider Gaius the most annoying boss in the DLC, not hardest, but definitely the most infuriating.

I think Gaius is a really fun and fair fight, the infuriating one for me is putrescent knight. Stand still and let me hit you back, damn you! Use the equip load physick for light rolls and Gauis suddenly turns into a really fun fight.

Because there is nothing under the helmet, it's logical because the game doesn't need the flesh body that never shows anyway.
