Ingredients:
250g smooth ricotta
100g Greek yoghurt
2 tbsp lemon juice (½ a juicy lemon)
2 tbsp extra virgin olive oil
1 tsp fresh lemon thyme leaves
2 tbsp honey
½ tsp lemon zest
½ tsp salt
½ tsp black pepper
Method:
1. Add ricotta, Greek yoghurt, lemon juice, olive oil, thyme, honey, lemon zest, salt and pepper to a food processor.
2. Blend until very smooth.
3. Place in a serving bowl and drizzle with olive oil and honey and scatter some thyme, mint and lemon zest into the bowl.
4. Add salt and black pepper to taste.
5. Serve on toasted sourdough with grilled peaches and prosciutto or strawberries and basil.
