Use the same weight as we used for the raspberries. So we used 100g so use 100g of purée :D It will depend on how watery your purée is.

Can I replace the thick cream with regular cream (heavy whipping/double cream)? Or can I take 2 tsp of cream and whip it a little until it's thick?

If you're using normal cream, you'll need to use a smaller amount (maybe 3/4 of the amount i specified here) as it's more liquid-y. I've never tried it with regular cream but best of luck!!

For some baking recipes I've reduced the fruit puree down more to reduce the amount of liquid. If you start with a thicker puree, you can probably afford to use a thinner cream.

I use it as is for macaron fillings! I just make sure it is fully set and cold (it thickens once cooled)

I usually eat it within a few days, so I'm not too sure how long it stays good...... but maybe no longer than a week, stored in an airtight container in the fridge (that's my guess)

Yes, I think it is :D as long as it more than 35% fat content. Thickened cream usually has some emulsifiers or thickening agents in it. It's different in Australia and America though!

I'm not sure it sounds like it would be delicious though!! let me know if you do. Peaches and raspberries should be interchangeable, maybe try and add more peach but reduce the liquid a bit more beforehand to get rid of extra juice

Yes you can use heavy whipping cream, or something with a 36% fat content at least. It should be very thick. Hope this helps :D

that would be delicious! but it is thickened cream (in Australia) it usually has a few emulsifiers in it to keep it thick. if you want to use another cream maybe use less to keep the ganache thick.
