I took a watercolor class a couple of years ago, and the instructor had us do a horse as well. He optically blended the colors, first completely painting the horse in different shades of purple, then, after that was dry, he covered it with orange watercolor paint to make a deep, rich brown. But this wet on wet technique is good as well.

This is such a well done tutorial, with clear dialogue and easy to understand choices. I've been really impressed with your videos! Bonus, you used affordable paints and showed a perfectly acceptable example of using black watercolor with success. There are quite a few channels that literally tell you never to use black (typically pushing you to mix a similar dark neutral) and even reviews that complain that any white or black in a pan set is useless. Your channel is a breath of fresh air! Thanks for sharing :D

Emily, this is another stunner! Thank you! I feel like I learned so much every time I watch one of your tutorials. I have a question for you - a friend wants me to paint her Palomino quarter horse. I haven’t the slightest clue what colors I should use. What would you suggest?

It depends on the reference image, light and shadow, etc, but as long as you have a nice earthy yellow (like raw umber/or yellow ochre), a cool color (like ultramarine blue), and a darker brown (burnt umber, transparent brown oxide) you should be able to get nice results.
