I love how two people can read the same comment are get wildly different impressions, both super positive and negative. It's like a friend sweetly telling you that you're fat but you feel they mean well and you're not offended, but if somebody else you don't know says it, you're mad as hell. 😂

It’s so worth it to make it!! I just made it last night. My arms and hands fell off trying to knead it cause it’s so sticky but it’s so delicious 🤤

Milk bread is great to make at home but it’s best to use a stand mixer. A loaf lasts only a few hours in my house though!

I make Japanese milk bread all the time. Just use your Stand mixer to do the kneading for you. I let mine kneed for 8 min on medium speed. That’s after it is well mixed. @@LifeWithYen

It’s not a “regular” purchase. It’s a special thing. Like buying fancy chocolate or something. Sure you could get a dollar candy bar but occasionally maybe you want that luxury candy bar from Sweden. Idk

It would be interesting to do a comparison of the shokupan with other white breads, including bakery white bread and home-made white sandwich bread. (I understand your childhood fascination with Wonder Bread, but it really is a lowest common denominator product.) King Arthur has a recipe for a Japanese white sandwich bread which includes using a tangzhong, and I’d bet that would make a huge difference in taste and texture. Overall a fascinating episode, and thank you, as ever, for the fascinating fun!

Wow, I can’t believe what you paid for that Shokupan. I just baked a loaf of it this afternoon, I’ve been a bit obsessed with it lately. It’s not hard to make and it’s amazing toasted.

Yes, I would definitely love to see the egg drop sandwich! The other thing that's great about shokupan in Japan, is that you can buy just 2 slices or 4 or 6 slices . So it won't go bad before you can eat it. Especially in the humid summers.

Well done! I personally think some of the fresh Korean breads baked at H marts would give the Nihon style breads a "run for the money" but i loved the demo and comparison. And i grew up eating Wonder Bread!

Some Korean baked goods are of japanese origin/inspired. Largely due to japanese occupation in 1910-1945.

"Fluffy, yet substantial." I wonder (pun intended) if they use duck eggs to make the Japanese bread. My mother always bought white bread, but it was day-old bread, sometimes even a couple of days old. She would also buy an extra loaf to put in the freezer. I didn't have fresh bread until I was an adult with a job and could buy my own bread... and I discovered that there wasn't any real appreciable difference between day-old bread and fresh bread. Unless I bake it myself, and fresh-baked is fantastic. Plus, when you bake bread yourself, your house is filled with that great bakery aroma. 🙂

The Japanese bread looks exactly the same as our “Tin Loaf” we get freshly baked here in the U.K. the difference is that it’s about £2..

supermarket bread today don't go stale after 2 weeks or so (chemicals) - bread made in the 70's started going stale after 3 days and taken off the supermarket shelves after 3 days (my father was a bread man for over 30 years) so with any food today look at the additives

Shokupan is made with milk and butter, unlike western white bread, making for a denser bread. It really is delicious, but save your money and make it yourself. It’s really easy(and it makes the best bread crumbs!)💕

I have a few "western" bread makers, and all of them use milk and butter in their white bread recipes.

Yes exactly I think I was16-17 years old when my parents had bought a brand maker. I don't remember if we every added butter in any of the recipes we followed from the bread cook book the machine came with, but I do remember using powder milk. We mostly used the bread maker to made bread dough and used the dough to make pizza/ calzones or bake it a loaf pan, because if you cook bread in the machine. You have a hole in your bread because of the dough hook. True not all western brands have milk and butter in them, but seriously their are over a hundred types of breads. Some don't even have any wheat grain flour in them like the Keto bread that is made from almond, 12 eggs, butter and baking powder. Italian feather bread and whey Ciabatta bread uses butter, whey or milk just to name a few. When my family makes cornbread we make with yellow cornmeal, sour cream, cream corn, eggs, baking powder. Melt a stick of butter in a iron pan (ideally) pour batter in and bake.

If that Ginza-something bread is sweet and dense but fluffy and have a chew to it and is moist, it sound like it probably taste and feel something like a Swedish limpa bread. In the Swedish bread, they used sifted rye mixed with wheat flour to get that special feeling (plus a ton of molasses). And that is something the home baker can do, replace around 20% of the bread flour with sifted rye flour. It does make a positive difference in texture and mouth feel.

You make it sound like theyre trying to rip people off. Just an unfortunately high cost to ship large, what often needs to be temperature controlled stuff overnight. Being able to get something from a famous restaurant/deli/bakery/etc. without having to travel across the country is worth the cost for enough people for goldbelly to still be in business

I've been making just plain white bread all year, only 6 ingredients, my sister in law said its as good as her grandma's (pretty high praise) I kind of want to try the shokupan bread now tho, looks good.

With all that bread equipment, you should get one of those foldable electric bread slicing machines. They used to be in every kitchen in Germany until 20ish years ago and they fold up into a kitchen drawer.

Grandma made sandwiches out of delicious multigrain bread, Mom opted for Wonder bread in sandwiches. I used to sit there thinking "I wonder where they're hiding all that nutrition? I guess that's why it's called Wonder Bread "

I haven't eaten Wonder Bread since 1966, when my 2nd grade class took a tour through the factory in Dayton, Ohio. We all got a free slice, fresh from the oven at the end of the tour.

Comparing the Japanese bread to Pepperidge Farm Hearty White bread should be very interesting. It “looks” more like the Japanese bread including having a more dense consistency than wonder bread.

What a treat, morning coffee with such a positive person and my fav food- toast! I "wonder" if the toasting difference is the sugar content in the breads? Just looked at using a frying pan to toast- once I saw her toaster- which is basically a double sided frying pan. It looks to toast more evenly than a toaster---will try.

@@asunbeam5479 it's just thick sliced bread. Usually comes with butter and garlic. But you can get it plain. I'm not sure what makes it special though other than the butter and garlic.

I think the reason the "wonderbread" browned more is that because there's often a much higher sugar content in US breads, to the point other countries will class it as cake rather than bread (happened with Subway here in the UK due to their breads being high in sugar, forcing them to reduce it!), and of course sugars are what caramelise in stuff when cooked, so I would assume that japanese bread contains far less sugar, which is better for you... :)

I thought this too but in looking further it actually turns out that wonder bread is actually surprisingly low in sugar. So it's probably not the sugar content in this case.

Yes! I make homemade white bread, and mine contains a teaspoon of sugar and a tablespoon of added fat per load. The rest is flour, salt, water and yeast. It doesn't toast as dark as quickly as store bought bread.

Would be surprised to notice US bread normally has half the sugar and fat content of most Japanese bread including milk bread varieties. Not usually as much flavor though since has reduced contents unless it is like a hawaiian sweet or similar.

My comparison would have to include butter. Sometimes bread gets too soft when adding butter. I like mine to stay crispy .

You should try hardough bread. You can eat it with almost anything. Some people Ike to eat it with condensed milk, others go safe and eat it with butter. Avocado works too. You can use it as a provisional side with your meals.

Try making tangzhong. (Many recipes all over the internet.) or hokkaïdo, Japanese milk bread, and other names I've forgotten.) it's really soft and fluffy.

That Shokupan looks and sounds exactly like a type of bun from around my parts. Which is a dense white bread, frequently baked again to make a plain, light biscuit. (beschuit) They wouldn't be more than two bucks though.

Definitely worth trying as a novelty if you're dying to know what an authentic japanese sandwich is like. (like the fruit ones!) But otherwise it's much cheaper to make at home

Ooh, I think a good sandwich recipe to make with that bread would be a 3-color sandwich, or samsaek sandwich. Maangchi has a video for that. I've made that one several times. It's really good.

As a french girl who had white bread only for breakfast or collation, paying 18$ for something costing less than 1.50 Euro is extremely painful x) I prefer buying a real bread from the bakery xD

When I was a little kid I would look at the wonder bread bag with all those colors and hope it contained something more exciting than plain bread 😂

I feel like this bread would taste/ be very similar to bread in New Zealand. We use milk/ milk powder in some of our breads here!

Cobs bread makes amazing white sandwich loaves for a reasonable price . All of their bread , buns and sweet treats are amazing and affordable

💛...a lot of artisan/freshly made breads available at farmer's markets are $12-15, so $18 isn't that much more... you can make it yourself for a whole lot less but it's quite a labor-intensive thing... mass produced bread just doesn't compare...

A close substitute is the Taiwanese bread at Ranch 99, thick cut. I use a Japanese Balmuda toaster. America now makes a Balmuda toaster. Awesome toast!!
