We have made 3 musketeers bars for years. The inside mix we use is marshmallow fluff, cocoa powder and malted milk powder. All available at most grocery stores. The outside is the almond bark or candy coating chips. My neighborhood kids always loved them for the holidays.

My granny used to make those back in the 60s. Now, she DID add a layer of Marshmallow Fluff, a layer of caramel, and some fresh roasted crushed peanuts to her's before enrobing it in almond bark. She was copying Goo-Goo Clusters, one of the South's oldest and most iconic confections right up there with Turtles, both made in the Chocolate Capital of the South, Chattanooga Tennessee.

I love what you did here, but as a former Godiva worker, I'm not surprised your result was not very similar to the original. Real nougat is made of boiled sugar syrup and egg whites, mostly. The sugar is boiled to a hard-ball consistency. Of Course cool whip and chocolate whipped together won't have the same flavor and consistency; it's basically whipped ganache. However, I love the idea, it's a great way for people to dabble into chocolatiering.
@kameljoe21
@kameljoe21 2 ай бұрын
When it made is it like a souffle? From the ingredients list it calls for sugar, corn syrup, cocoa powder, palm oil, salt and egg whites plus artifical flavor. They must whip the sugar syrup and egg whites really fast to prevent cooking the egg whites or do they let the sugar cool before this process. I kinda wonder if they mix the cocoa powder, salt, oil in after the initial whip? Godiva makes one of my favorites ice creams, the chocolate raspberry.
@lovepeace9902
@lovepeace9902 2 ай бұрын
@@kameljoe21I'm quite sure they let it cool enough so that the eggs wouldn't cook (they cook in seconds in hot sugar or sugar butter mix) but not too much for it to harden. I add the eggs when the sugar mixture is hot/warm but doesn't burn my hand or tongue when testing it.
@kameljoe21
@kameljoe21 Ай бұрын
@@lovepeace9902 I later learned that the innards of the bar is a nougat and you can follow the general instruction on how to make a nougat. Or you can try it from the description on wiki. What is the nougat in 3 Musketeers made of? Manufacturing. The candy is made of a whipped nougat mousse formed into very large slabs, which are cut to size and enrobed in milk chocolate. The nougat chocolate center is made by whipping egg whites until they are light and frothy. Sugar syrup is then added, stabilizing the foam and creating mousse. Ingredients list of the bar: Milk Chocolate (Sugar, Chocolate, Cocoa Butter, Skim Milk, Lactose, Milkfat, Soy Lecithin), Sugar, Corn Syrup, Palm Oil, Cocoa Powder Processed With Alkali, Less Than 1% - Salt, Egg Whites, Natural and Artificial Flavors. My best theory on how they make it: Milk Chocolate (Sugar, Chocolate, Cocoa Butter, Skim Milk, Lactose, Milkfat, Soy Lecithin) and Palm Oil makes the coating for the bar. Sugar, Corn Syrup, Cocoa Powder Processed With Alkali, Less Than 1% - Salt, Natural and Artificial Flavors makes the syrup. This stage maybe heated yet unclear. Recipes I found call for hard crack stage 300f to 310f. Egg Whites makes the fluff. The bar is quite simple. The only things that a person might not find are the natural and artificial flavors which I am sure are used to enhance the coating flavor and the center. Its super unlikely that even a call to them would result in them telling you what those chemicals are. Though one could try.

@mr.somebody1493 3 ай бұрын
@@teri2466 The second ingredient of the nougat is corn syrup, which contains maltose AKA malt sugar. To me it tastes of malt. True it's not as pronounced as Whoppers, but it's there. Malt is a common ingredient in nougats from the Milky Way bar to Russel Stover candies.

These turned out to look fantastic. I'm not a candy maker, but I've made versions of these for my son's friend in school. The poor kid was allergic to just about everything. I used vanilla almond bark and sun butter for the filling. A tip for cutting the nougat, keep a glass of warm water next to you. Dip your knife and dry before cutting, a warm blade cuts smoother and helps keep those clean edges. Lol. These looked really good. I'm a huge fan of musketeers. ❤❤❤😊 edit to add. If you want more chewy center, add a bag of mini marshmallows to the chocolate and whipped cream.

10:20 A little trick I once saw my grandma do when she was making a cake (She did this parchment paper design like you did) was that rather than trying to directly lift something out of the pan, she took the longer layers and pulled them down over the pan edges, utilizing physics not unlike how a pulley works. You only really have to do it to release it, then you can lift it out normally. :)

I always thought the original candy bars were way too sweet for my liking. That's why I always chose "ZERO" chocolate bars due to their bittersweet chocolate taste. There's way too much fructose in candies today and by the mid 40s people are getting diabetes already due to the excess glucose in the bloodstream. It is nice to see that one can actually make their own chocolate bars are home though! At least this way one can control the sugar and the ingredients in the candy bars! Great video!

Sugar doesn't cause type 2 diabetes. It's caused by being overweight and genetic propensity. In fact, studies show that eating a lot of red meat dramatically increases your risk of type 2 diabetes. But "glucose in your bloodstream" does not cause diabetes. The American Diabetes Association has a FAQ about it because so many people don't understand that sugar does not cause diabetes.

Thank you so much for your content, Emmy. My spouse and I watch your content almost every night as we're winding down for bed. Your videos bring us a lot of comfort and another thing to bond over!! Have you given any thought to doing a series on regional eats across the states? There's even a wikipedia article for it. Though it's missing North Dakota (shocker). If I could, I'd fill that blank space with Knoephla soup.

The original may be made like a real nougat. I think that's made by heating sugar and corn syrup to the soft ball stage and whipping it with whatever malt powder and chocolate they use. Real nougat is soft but chewy. Your version is basically frosting with air whipped in. It probably tastes a lot more of chocolate than the original 3 musketeers does. Both seem really delicious in their own way. There's probably a how it's made video for 3 musketeers. Reminds me of all the candy dupes Claire Saffitz used to make on Epicurious.

There is a better quick nougat recipe that might work better for this. 1 bag marshmallows 1/2 bag milk chocolate chips and 2 tablespoons malt powder. Melt all together and you will end up with a nougat center more like you're looking for. Pour into lined and buttered/oiled pan and put in fridge or freezer. Once set cut to your favorite size and then use the candy bark to coat. Its not quite as light as 3 musketeers but the flavor is there. It might be a matter of tweaking the marshmallow/chocolate ratio. Ive used this marshmallow/chocolate combo to make several different nougat centers. To make brachs white jelly nougats its just 1 bag marshmallows/ 1 bag white chocolate chips with cut up Dotz in(or fruit snacks my mom preferred the fruit snacks) For a peanut butter nougat its 1 bag marshmallows/ 1/2 bag white chocolate chips and one cup peanutbutter melted together. Then pour into a mold. Then I put melted caramel and peanuts on top and back into fridge then cut and dip into chocolate and its like snickers bars.

I love 3 musketeers. One of my favorites. Fun fact: they’re called 3 musketeers obviously after the novel. But when the candy came out there were 3 flavored candy pieces. Chocolate, strawberry, vanilla that came in a pack. Because of WW2 and the cost of sugar going up, they got rid of strawberry and vanilla while keeping the chocolate one.

Emmy, I had to giggle when you said it wasn't exactly your favorite candy bar lol. I remember Halloween as a kiddo, I used to rank and eat my candy best to worst (exact opposite of what I do now, saving the best for last haha) and there would always be Milky Ways and 3 Musketeers hanging out int he bottom of my pillow case that I used for a candy bag, along with Dum Dums and licorice haha. Your bars came out BEAUTIFULLY! Very fun one!

As a food allergy sufferer, these type of commercial candy bars have been off the table for me for years. I can swap for allergy free ingredients and hopefully enjoy the reminiscent taste of Three Musketeer's bars. Swapping the cool whip out for So Delicious, and the chocolate chips for allergy safe, dairy free chips should do it. Thank you so very much for sharing this. I'm so excited!

When you blend a few kinds of chocolate you get a really rich fudge taste going... This was freaking amazing, I was going to saying dropping the temperature of the chocolate and the added water isn't going to be good for the chocolate but that reaction that goes on is cool :)

Years ago, there were dark chocolate with mint nougat three musketeers bars. I used to keep the snack or bite-sized ones in the fridge. They were great to pop in my mouth in a single bite when they were cold. They weren’t quite as sweet and one-noted as the originals. I miss those mint ones.

3 Musketeers was one of my fav candy bars when I could eat sugar. I am now pre-diabetic so I have to substitute these ingredients with sugar free chocolate chips, low carb, low sugar Cool Whip(or something similar to Cool Whip), and then sugar free chocolate for covering(unless that Almond Bark is sugar free and low carb. I find it fun and challenging to substitute ingredients I used to be able to consume!

Quick Tip: To get the shiny chocolate coating, always temper your chocolate in a double boiler on the stove. The microwave works fine, but something about the speed and the way it melts the chocolate changes the structure of the sugar crystals (I can't remember the specific science behind it), but tempering over a stove will give you the shiny chocolate.
