I made this recipe tonight for Christmas dinner with my family,I followed it to a t except I made the tomatillo salsa and chicken night before,marinating the chicken for 24 hours in the sauce,it was amazing!!!! Everyone loveeeed it!! I made your Mexican rice also,following your recipe exactly,except I sauté the rice in bacon grease. Best Mexican rice I’ve ever had!! I just wanted to say gracias guapa!! I did not fry my tortillas. I sprayed each tortilla with canola spray to reduce the oiliness before heating on a pan. Came out great

I made these today, they were really good. The sauce taste so fresh, clean and creamy. I did end up with way too much chicken, but I guess we can use it for tacos or quesadillas this weekend. Next time I make it, I might add some habaneros because it wasn't quite as spicy as I usually make enchiladas.

Delicious!!! I substituted the Serrano peppers for regular jalapeños I didn’t want it to be to spicy. I also added chopped onions as part of the filling.

Bless you. Here in Colorado. Color of red. I eat and grow peppers 🌶 tomatoes and tomatillos. So Spicy. My Cilantro some say tastes soapy. I keep bees. They don’t sting me. Only Wasps Yellow Jackets and hornets 🐝. Bumblebees love me
