高筋麵粉450克 Strong flour 450g
酵母12克 Yeast 12g
糖35克 Sugar 35g
米糠油或菜油20毫升 Rice bran oil / Vegetable oil 20ml
適量白芝麻 Handful of toasted white sesame seeds
10克吉士粉 10g Custard powder
六份一茶匙鹽 1/6 tsp salt
湯種水份120毫升 Utane dough: 120ml water
麵團水份150毫升 Bread dough: 150ml water
餡的材料： Filling ingredients:
無鹽牛油140克 Unsalted butter 140g
糖70克 Sugar 70g
椰絲70克 Desiccated coconut 70g
全脂奶粉50克 Milk powder 50g
鹽六份一茶匙 1/6 tsp salt
吉士粉10克 10g Custard powder
低筋麵粉10克 10g Soft flour
雞尾包的白油： Cocktail bun decoration paste:
無鹽牛油45克 Unsalted butter 45g
糖10克 Sugar 10g
低筋麵粉25克 Soft flour 25g
雞蛋一隻 1 egg
(打勻，搽上飽面上) (beat well, egg wash)
