Wow there is no way I’d go through the effort of making this (only to fail most likely) but watching you do this is like watching someone create art, calming, satisfying and awe inspiring at the same time.
I tried making this and mine came out really pretty! The exterior is more towards flaky and chewy VS light & crisp (which might be what you expect when you look at it). It gets a bit greasy after a while and I can’t eat more than one piece (but that might be due to issues with my lard). The taste of the exterior overwhelms the overall pastry, I can’t seem to taste the yam which is such a pity (since I really enjoy eating the yam - which BTW, tastes good even by itself). Would recommend adding more yam filling and maybe even air frying or deep frying it!

Thanks for breaking this down.. it doesn't look to hard to make.. should I replace lard with salted or unsalted butter? Edit : I just made this today... dough ratio given is totally off.. deffo not 34g and 24g .. the ratio is to far apart.. making the water dough and oil dough not even..Water dough is also to thick.. Luckily it was only one dough.. I made my second one with 41g and 42g ratio it was perfect.. I think u need to measure your dough again..
