An English Muffin is a round, fairly flat, yeast leavened bread, that is cooked on a griddle. The outside crust of the muffin is golden brown, while inside it is soft and spongy.

Stephanie is a fantastic teacher. I've been baking for a while yet any time I'm going to try something new I search to see if she's done a video about it. Her very thorough instruction most often makes sense of the recipe I'm contemplating and sometimes I'll switch to the one she's making.

If you don't have a tart ring-you could use some tuna cans-just remove lids, bottom, and labels and wash.

*Trouble is, these days the cans are designed for stacking, so you CAN'T open both ends. :(( Anyway, liked your idea! :-))*

@@gardengalsu what i did recently is i need to take food with pain meds at time, so keep the bigger cans of chicken (much wider) and took my dremel with a cutoff wheel and cut/sanded the bottom off, didnt bother with the tuna/catfood cans.. too smale

I have been following your recipes since you had a brown kitchen 😊 your recipes are fool proof. You were already so good back then, but you are perfect example of "there's no limit to perfection". I have made the most tasty English muffins from a recipe very similar to this many years ago. Then life happens and I lost track of the recipe. I was so glad to finally find yours because it is a thick batter just like the recipe I lost, and not a dough that I have to roll out, etc.

Since the first time I made this recipe about 2 months ago, I've made it every week since. So fast and easy, my family has always liked English muffins on Saturday mornings. Making them fresh is a real treat.

Anyway.. Stephanie.. I could never get bread to rise in my kitchen and I started turning the oven light on to keep my plants warm and then last year decided hey what the heck let's try proofing my bread in here. It really makes a big difference

I've been making English muffins for many years, and I use, 1 and half cups of warm milk and 1/4 cup of warm water, plus I added 1 tsp baking powder for the rise... ( the only difference) I like the dough runny even more like pancake batter, so I can spoon it to the rings... Every thing else in your recipe is the same as your's .... They are the best out there.... The are a lot of other recipes out there, and if you have to kneed the dough, your making bread.... that's not a English Muffin at all. Thanks for sharing your way of making a real English Muffins...

I bet these wd also be fabulous w/ Cornmeal; touch of sourdough starter too ?? A Polish bakery in our OH town used to make a soft corncake I'm trying many yrs later to duplicate. Texture here looks exactly right. *Good clear simple explanation of this recipe. Thx.

Question, the rings i got are about 1'' high, should I put a bit more batter in so that when I flip them they will brown on the other side in case they don't release and go to the bottom of the ring when flipped? Also, since they will be a bit thicker do I bake them a couple mins extra?

Interesting that you eat them ‘raw’. My Family is English and we split and toast them, otherwise they just taste like scones. My mum got them cooked through on the griddle by putting a lid on once she flipped them. Try them as the base for Eggs Benedict - just perfect :)

Caution proofing dough in your oven with the light on. Check the temp. Mine actually gets to about 90F after 30 minutes! I learned the hard way as it really dried out dough in the bottom of a stainless bowl. Yeast dough will rise in cool temp (even your refrigerator) but will take more time. I live in Florida, in summer house is mid 70s, avg 75F but in winter it's 65 to 70 and same dough recipe takes about 15 mins longer. There's no rush (unless you need to be somewhere else) the dough will be fine.

Yes, if the room temperature is cool, the dough will take longer to proof. Conversely, if the temperature is hotter, then the proofing time is shorter. It is really nice to have an infrared thermometer when proofing. That way you can monitor the temperature of the proofing container and the dough. If you are placing the dough in the oven with the light on, if you use the thermometer you can check the temperature inside your oven. If it gets too high, just turn off the light.

I just made these from another recipe on YT but wish I'd done yours instead. That recipe called to ferment the dough18 hrs, & they smell like beer so badly. Taste alright, but... & that was my first time w/ EM's! Really appreciate your channel. The other one is a professional baker too, just a different recipe for these. Is your electric griddle teflon? I've been leery of getting teflon anymore but it works so well for non stick & I NEED a griddle, ha! Thanks for all your great posts.

You could use bread flour but it will affect the texture a little.

I've never understood why we make a well in the center of the flour, and in other dough recipes it doesn't say to make a well. Not judging but I'm just curious if you know, why the well? Thank you in advance. I love this channel and have made several of your recipes successfully because your instructions are so precise. I also weigh everything because of you 😁

Making a well keeps the liquid from sticking to the sides of the bowl which is a pain if you are mixing with a wooden spoon or fork. However, since most of us have rubber spatulas now, a well isn't really necessary anymore.

Can one substitute cow milk with almond, or coconut milk? I am allergic to cow milk. Would be nice to see alternative baking on this channel if possible. Been a follower for years.

If anyone is using active dry yeast, then maybe add the salt to the flour, rather than the proofing liquid, so you don't kill your yeast

If you are using active dry yeast, I would heat 1/3 cup (80 ml/grams) of the milk and then stir in the yeast. Once activated you could add it to the rest of the liquid.

Individual pizzas: Spread tomato sauce on each half, put shredded mozzarella on top, and then broil them until the cheese melts.

Yes, the lines between an English Muffin and a Crumpet are small as they look alike and are both cooked on a griddle. But since a Crumpet is only baked on one side, and to not confuse things, this recipe is for English Muffins. I guess I will have to do another video for Crumpets.:)

Forgive me, my comment was meant to be a bit tongue and cheek. "Crumpet" is a slang for a beautiful woman. As you are an attractive woman the title I mentioned would be correct. I would like to see a video on how to make Crumpets. .....A "Crumpet" makes Crumpets... haha BTW, your video on lemon-ginger-almond scones has become a bit of a "go-to" recipe. 'have made them several times.

We have a worldwide audience and some people use cups and some use weight measurements, so we will always give both.

You may want to consider switching to grams yourself because volume measurement in cups is very inaccurate. I have a video that shows how the amount of flour can vary as much as 25% depending how you put the flour in the cup. That error can make or break a recipe. Personally I always use gram measurement. Ah! Both of you are wrong. Found this on a food site: Crumpets are made only using baking soda, where as English muffins are made with yeast or sourdough (and occasionally a little baking soda to help things along). Crumpets are cooked only on one side, so the bottom is flat and toasted while the top is speckled with holes (delicious, butter-absorbing holes...)

dcwatashi you are right that they are not quite crumpets. They are probably more like blinis than crumpets. I may be wrong but I believe what the English call muffins are what Americans call English muffins. They are actually like flat bread rolls.

In 1769, an English businesswoman by the name of Elizabeth Raffald published a cook book called The Experienced English Housekeeper. In it, she has a recipe for Tea Crumpets which were similar to this recipe; warm milk and barm (their equivalent of yeast) mixed with flour and cooked on a griddle. They were only cooked on one side and toasted before serving. She also says that they should be the size of your saucer. Baking soda didn't show up as a product until 1848 (although wood ash was used for a similar purpose for hundreds of years before then.) Liquids are measured in milliliters and solids in grams. nice videos btw :)

They aren't crumpets. Crumpets are only cooked on one side. They are similar but not the same.

They're certainly similar, but at least in the UK, we couldn't consider these as English muffins. in fact, you're right they're also not totally a crumpet either because of the cooking on one side. These are a sort of hybrid of the two. It's a nice interpretation, just not what we brits know to be as an authentic English muffin. I can't speak to what's prevalent in the US, but would you put one of these in a eggs benedict?
