It is really quite astounding how these recipes, brought over by the diaspora, remained so similar despite the differences in climate and water composition. The imperial system of measurement was key since it could be easily memorized, used simple tools, and tweaked to adapt to the region. Those ladies couldn't read or write and yet the recipies remained the largely the same.

My favorite English Muffin recipe is mini-pizza's. Super easy to make. Toast your muffins. Spread a thin layer of tomato paste. Add a sprinkle of Italian seasoning mix, and a slice of cheese (and kind). Return to the toaster oven just long enough to melt the cheese slightly. Super simple, and they taste great! You can also jazz them up with pepperoni slices or other toppings. Just be careful, you don't have a lot of space to work with. For pepperoni, my family would slice the slices of pepperoni into quarters, and place on before the cheese. You can put the pepperoni on top of the cheese, but i find it tends to burn, which isn't nice.
