@@glenbe4026 That's so true. People who've never experienced a Canadian have the media's assumption, but like Canadians in the public eye are as polite and kind as UK celebrities, so it's silly. I'm from the PNW where the culture melds with West Canada, and aside from both loving nature and flannels, there's the same shitty bravado, bar fights, and country/hick racism and back country people with shotguns....but both generally pretty nice. Not all over, though. It's a silly generalization.

My husband does amazing roast potatoes, he boils them until they go a bit soft, then gives them a shake in the pan so the edges look a bit fluffy. Then he heats some duck or goose fat in the oven on a high heat for about five minutes until it melts, then puts the potatoes in it and makes sure the potatoes have a good covering of fat. Then he seasons them with salt, pepper and any herbs or spices (these change depending on what roast we’re doing). And then cooks them for an hour. Omg they’re so good! So crispy and lots of flavour!
