How to Make Gâteau de Pommes - The Victorian Way

Today, Mrs Crocombe is making Gâteau de Pommes (or 'apple cheese') - a sweet dish using the apples harvested by Edgar, the third gardener at Audley End House.

INGREDIENTS
500g sugar
275ml water
1kg cored and peeled apples
The zest of 2 lemons
Sliced almonds and custard for decorating.
METHOD
Make a syrup by boiling the water and sugar and let it boil for 15 minutes. Dice the apples into small chunks and add to the syrup. Stew for some time, stirring to avoid burning, until down to a marmalade texture. Add your lemon rind and stir. Let the mixture cool, then line a mould with a little butter. Push your mixture into the lined mould. Store somewhere cool until needed. To serve, turn out of the mould and decorate with sliced almonds and edible flowers.

Actually, dinner guests would never see the cook in an estate that size unless the mistress invited her to the dining room for some special praise. Even then, it would be highly unusual and improper for the guests to be exposed to the kitchen staff.

​@@nathancarlson7878 Being "In Service" was not slavery. There were tiers of servitude - classes, if you must. The young man that brought the apples was the Third Gardener and he wore a tie. He would have had a decent wage and housing on the grounds, probably a private room and a scullery maid to clean his chamber pot. In the house, Mrs. Crocombe was the boss of the kitchen, probably a step higher than the Head Gardener since she was in the manor, and she was allowed to be married - that was quite a thing. Mrs. Crocombe is not rich - the people she served were. Her cool demeanor was meant to keep the classes in place and let them know that with power came privilege.

Mrs. Crocombe does not approve of unannounced dinner guests. Considering how labor intensive cooking was at the time, however, I really can't blame her.

Anyone who serves as a cook, even if it's just cooking for your own family, knows how aggravating it is to have unannounced guests just showing up for dinner. You have to start preparing more dishes--as quickly as possible--when that happens. Not to mention that sometimes we just don't have enough ingredients to make more. This happened to me on occasions, and I DO NOT appreciate it.

Not just time and labor intensive but also there was a limited ability to store leftovers, so it wouldn’t have been economical to habitually make more on the chance there might be more diners.

It seems to be a thickened applesauce "jello" dessert. I can remember my mother making homemade applesauce, it was not allowed to thicken like this. The applesauce was great for you if you were ill, as it was easy on a sore throat or delicate stomach. It was also an excellent topper for gingerbread.

Just made this. Its wonderful, not just to look at, but to taste as well. I added a bit of gelatin to it because I was afraid it wasnt gelling enough but in hindsight that probably wasnt necessary because mine it ended up being even a little firmer than I intended (though i didnt find that to be a problem in any way). I decorated it with almonds (I feel mrs crocombe would not approve of anything less) and candied mint leaves and juliened lemon zest, both of which i made by brushing them lightly with egg white and then tossing with sugar, letting them air dry afterwards for several hours. They turned out delicious and nice and crunchy, not to mention a beautiful garnish. By far the hardest part was getting it out of the mold. i recommend a thin metal one rather than a ceramic one as shown in the video; easier to dunk in hot water to free the edges from the mold. Also required much wiggling and a little bit of manipulating with a finger to break the suction. If you dont have a vintage jelly mold, i suspect one could also put this in a simple saucepan, the result would be a far simpler shape but would, i suspect, have just the same impressive quality.

Lovely ! that's really funny because Gâteau de pommes in France is like an apple cake basically, and in english it's "apple cheese" meaning "fromage" in french like Cheddar, Stilton, Brie etc 😂 how languages can be fun ^^

@@justineprime1891 Yeah, the way it's cooked and looks is like something between a compote and a gelée (jelly). Though funnily enough, we do have a meat-based dish called "fromage de tête" (head cheese) that also has a sort of jelly-like texture sooooo... It'd be better to check history books at that point haha that'd be interesting!

En fait, "Fromage" ça s'applique parfois à d'autres trucs que du fromage à base de lait en fait... Du fromage de tête par exemple c'est une charcuterie à base de viande prélevée dans la tête de l'animal donc... Mais là, c'est tout bêtement une recette de pâte de fruit mais dans un moule à gâteau ^^
